1 lb spaguettis
4 tablespoons tomato paste
1 Teaspoon oregano
1 teaspoon black pepper
1 big red onion
1 tablespoon garlic paste
2 sweet small peppers
1 cubanela pepper
1/2 cup chicken broth
2 tablespoons mayonaise
Salt to taste
Parmesan cheese

Steps:

  • Boil your spaguettis until "al dente". Separate. In a pan, heat some oil (2-3 tablespoons should suffice) and add the onion, the peppers and the garlic paste. Let it fry for 2 minutes, add 2 cups of water, the chicken broth, oregano, pepper and tomato paste. Let it boil until creamy. Correct the salt. Add the spaguettis and mix. If they're still pale add more tomato paste, while making sure it is mixing well. When they're well mixed add the mayonaise and mix. Serve and add parmesan cheese on top. Goes well with baguette or plantain tostones.

SPAGHETTI A LA CRIOLLA RECIPE -

Spaghetti is one of the preferred pastas in the Dominican Republic, and this Spaghetti a la Criolla or Spaghetti Rojo (Red) is a popular dish. What's interesting about the way Dominicans eat it is that, most times, the spaghetti is accompanied by rice or plantains, making it a very hearty meal. This version doesn't have meat, but the recipe often includes cubed ham, salami or pork chop.

Salt to taste
1 lb spaghetti
2 tablespoons oil
1 large yellow onion, diced
3 garlic cloves
1 cup cubanelle or green bell peppers, diced
1/2 can (14.5 oz) Muir Glen™ diced tomatoes
2 cans (8 oz) Muir Glen™ tomato sauce
1/8 teaspoon oregano, ground
1/4 teaspoon white vinegar
3 tablespoons green olives stuffed with peppers, chopped

Steps:

  • In a pot, bring water to a boil. Add salt to taste and cook the spaghetti for 10-12 minutes or until done to your liking. After it’s cooked, strain the spaghetti and set aside.
  • In a large sauté pan, heat the oil and cook the onion, garlic and pepper until soft, translucent and fragrant. Add the diced tomatoes and tomato sauce.
  • Cook for about 10 minutes.
  • Season with oregano and vinegar.
  • Adjust salt to taste.
  • Add the cooked spaghetti to the pan and cover with sauce.
