CHICKEN FILLING
2 cup(s) chopped chicken
1/4 cup(s) chopped celery
2 tablespoon(s) chopped pimento
2 tablespoon(s) dry white wine --optional
1/4 cup(s) mayonaise
1/2 teaspoon(s) salt and dash pepper
- fill cream puffs and enjoy
SHRIMP FILLING
2 can(s) (4 1/2 oz )baby shrimp drained
2 - hard boiled eggs
4 tablespoon(s) finely chopped celery and/or chestnuts
2 tablespoon(s) lemon juice
2 tablespoon(s) chopped green onion
- add enough mayonaise to moisten
HAM FILLING
3 (4 1/oz) can(s) deviled ham
3/4 teaspoon(s) chopped onion
1 tablespoon(s) horseradish, salt and pepper
- combine and mix with enough sour cream to moisten

Steps:

  • Chicken filling Fill small cream puffs and use as hor d'oeuvre's
  • Shrimp filling Fill small cream puffs also and use for hor d'oeuvre's
  • Ham filling Combine and mix with enough sour cream to moisten fill cream puffs

  • Preheat oven to 400°. In a large saucepan, bring the water, butter and salt to a boil over medium heat. Add flour all at once; stir until a smooth ball forms. Remove from heat; let stand for 5 minutes. Add eggs, 1 at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by 1/4 cupfuls 3 in. apart onto greased baking sheets. Combine milk and egg yolk; brush over puffs. Bake until golden brown, 30-35 minutes. Remove to wire racks. Immediately cut a slit in each for steam to escape; let cool. , In a large bowl, beat cream until it begins to thicken. Add sugar and vanilla; beat until almost stiff. Split cream puffs; discard soft dough from inside. Fill the cream puffs just before serving. Dust with confectioners' sugar. Refrigerate leftovers.
