Cream Custard Cake Filling Recipe - Food.com image

A luscious old fashioned cake filling from the US Regional Cookbook, Chicago Culinary Arts Institute, 1947. Enough filling for two 9-inch layers, 2 dozen cream puffs or eclairs, or a 9 inch pie. Cooking time is approximate and cooling time not included in preparation time.

Number Of Ingredients 6

3/4 cup granulated sugar
5 tablespoons flour or 2 1/2 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk, scalding hot
2 eggs or 4 egg yolks, well beaten
1 teaspoon vanilla

Steps:

  • Mix the sugar, flour and salt together in a double boiler and add the hot milk gradually, stirring constantly.
  • Cook until the mixture thickens.
  • Pour a small amount over the eggs and mix thoroughly; add back into the first mixture and cook for two more minutes.
  • Remove from heat and cool; add vanilla.

This was originally given to me as a cannoli filling and although I still use it for that purpose, it also makes a great cream puff or cake filling as well as just a delicious thick pudding. A very old recipe - origin unknown.

Number Of Ingredients 8

2 cups milk
2 eggs, well beaten
2/3 cup sugar
1/2 cup flour
1 pinch salt
1 teaspoon vanilla
grated orange rind
1 tablespoon butter

Steps:

  • Scald milk, being careful not to burn.
  • Mix together sugar, flour and salt.
  • Add eggs to flour mixture and beat well.
  • Add slowly to milk, stirring constantly with whisk until thick.
  • (Thickens rapidly).
  • Remove from heat and add vanilla, orange rind and butter.
  • Stir and cool.

  • Grease and line two 23 x 33cm (9 x 13in) shallow baking trays with baking parchment. Beat the butter and caster sugar in a large bowl with an electric handheld whisk, until pale and fluffy. Add the eggs and beat again until just combined. Sift in the flour and custard powder and mix with a wooden spoon. Bring together and shape into a disc with your hands, wrap in cling film and chill for 30min. Divide chilled dough equally in half and roll each half on a lightly floured surface to a large rectangle 5mm (1/4in) thick and slightly larger than the trays. Transfer to the prepared trays and trim to fit, reserving trimmings for decoration. Chill until needed.  Roll 3/4 of the trimmings into thin strands of varying lengths, set aside. Roll out the remaining 1/4 trimmings to 5mm (1/4in) thick and stamp out letters spelling ‘CUSTARD CREAM’, with biscuit cutters. Remove one tray from fridge and arrange the letters in the middle, then use the strands to decorate the biscuit to look like the swirls and lines on a Custard Cream. Chill while you preheat oven to 200°C (fan 180°C) mark 6. Bake both trays for around 15min, or until firm and sandy to touch. Remove from oven and neaten the biscuit edges with a sharp knife. Leave to cool in the trays for 15min, then carefully invert on to cooling racks, peel off baking parchment and leave to cool completely. Meanwhile, make the filling. In a large mixing bowl, beat butter, icing sugar and custard powder with a handheld electric whisk until light and fluffy.  Transfer the plain biscuit to a large board, top facing down. Spread the filling evenly all over and arrange the decorated biscuit on top, with the lettering facing upwards. Serve whole, then slice.
