2 eggs, beaten
1/2 tsp. salt
150g beef (frying steak), thinly sliced strips (0.5-1 cm wide)
Some vegetable oil, for deep frying
1 carrot - finely shredded
1 spring onion, shredded
1/2 garlic clove, chopped
1 red chilli, shredded
10g sugar
2 tbsp. Blue Dragon White Rice Vinegar
2 tbsp. cornflour
2 tbsp. Blue Dragon Sweet Chilli Sauce
Splash Blue Dragon Light Soy Sauce

Steps:

  • 1. Combine the eggs, salt and corn flour then coat the beef strips.
  • 2. Heat oil to 200c then deep-fry the beef strips, taking care to add them to the wok one by one. Don't stir for approx. 10 seconds, then stir to ensure the pieces don't stick together. Cook for approximately 6-7 minutes until brown and crispy. Remove them and drain.
  • 3. Using some of the oil from your frying, stir fry the spring onion, garlic,chilli and carrot. Add the sugar, white rice vinegar, sweet chilli dipping sauce and light soy sauce and mix together.
  • 4. Finally, add the beef and toss together.

1 1/2 tablespoons cornflour
150 g beef frying steak, thinly sliced strips (0.5-1 cm wide)
vegetable oil, for deep frying
2 carrots, finely julienned
1 spring onion, julienned
1/2 garlic clove, minced
1 red chili, finely chopped
10 g sugar
2 tablespoons rice vinegar
3 tablespoons sweet chilli dipping sauce
splash soy sauce

Steps:

  • Beat together eggs, salt and cornflour. Mix in the beef until well coated.
  • Heat oil to 180C and deep-fry the beef strips, adding them individually. Leave them ten seconds before stirring, to prevent them sticking together.
  • Cook for 6-7 minutes until brown and crispy. Don't overload the pan or they will end up soggy.
  • As the beef cooks, remove it and drain on kitchen paper.
  • Using a little of the frying oil, stir fry the carrot, onion, garlic and chilli. Add the sugar, vinegar, chilli sauce and soy sauce and mix.
  • Add the beef and toss together.
