My mother used to talk about making her own cheese back in the "Old Country". This makes a good creamy cheese, with no preservatives.

1 quart fresh milk
2 teaspoons salt
2 tablespoons white vinegar

Steps:

  • Bring milk and salt very slowly to the boil.
  • Remove from heat and stir in white vinegar.
  • Leave to cool.
  • When cool pour mixture into a muslin bag and allow to drip.

1?¾ cups milk
1 tablespoon dry sherry
2 teaspoons dry mustard powder
1 teaspoon garlic salt
1 pinch ground black pepper
1 pinch ground nutmeg

Steps:

  • Cook and stir cream cheese and milk in a saucepan over medium heat until cheese is almost melted, 5 to 7 minutes. Stir in sherry, mustard, garlic, pepper, and nutmeg; continue to cook and stir over medium heat until cream cheese is completely melted, about 3 minutes.

Refrigerate for several hours or overnight., Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer’s directions. Refrigerate remaining mixture until ready to freeze. Transfer to a freezer container; freeze for 2-4 hours before serving.
