8 ounces cooked squid ink pasta 1 tablespoon dry white wine
2 tablespoons unsalted butter 1 cup White Sauce, recipe follows
12 ounces peeled deviant shrimp, Salt, cayenne pepper
finely chopped or lump crabmeat, 2 Kirby cucumbers, seeded,
finely chopped or lump crabmeat, 2 Kirby cucumbers, seeded, picked over cut into 1/4-inch dice
1 tablespoon tomato paste 2 tablespoons finely snipped chives

Steps:

  • Saute shellfish in butter. Stir in tomato paste, dry white wine and evaporate liquid. Add white sauce, bring to a boil and season to taste with salt and pepper. Fold in cucumbers and chives and serve over ink pasta.

Rockfish has long been considered one of the greatest treasures in the Chesapeake Bay watershed. With a delicately seasoned cream sauce and lumps of tender crabmeat, this delicious recipe is sure to make dinner a memorable occasion for all.

Cook Time 15 minutes

Number Of Ingredients 8

3 tbsps butter divided
1 1/2 pounds rockfish fillets
1 1/2 tsps old bay seasoning
2 tbsps white wine
1 green onion finely chopped
1 cup heavy cream
2 tsps French's® Dijon Mustard
8 oz lump crabmeat

Steps:

  • In a large skillet melt 2 tablespoons butter on medium-high. Season flesh side of fish with 1 teaspoon OLD BAY. Place fish skin-side up in skillet. Cook 5 minutes turning fish after 3 minutes. Remove fish from skillet. Keep warm. Reduce heat to medium.Stir wine into skillet scraping bottom to loosen browned bits. Add remaining 1 tablespoon butter and green onion. Cook and stir 1 minute. Gradually stir in cream.Stir in mustard and remaining 1/2 teaspoon OLD BAY. Simmer 2 minutes or until slightly thickened. Stir in crabmeat. Return fish to skillet. Cover. Cook 3 minutes longer or until fish flakes easily with a fork.

  • 1. For the sauce: Whisk together the orange juice, soy sauce, honey, vinegar, sesame oil, and sesame seeds in a small mixing bowl. Divide between ramekins or small pots; cover and chill until ready to serve. (Reserve the orange wedges for serving.) 2. For the rangoons: Heat the oil in a wok or heavy-based saucepan to 350°F; use an instant-read thermometer for accurate results. 3. Meanwhile, finely chop the crabmeat. Place in a mixing bowl along with the cream cheese, scallion, garlic, Worcestershire sauce, and some salt and pepper to taste; thoroughly stir to combine. 4. Place a generous teaspoon of the filling on the center of the wonton wrappers. Brush the edges with beaten egg wash before bringing the wrapper edges up and around the filling, pinching to enclose the filling; make sure there is no trapped air between the wrapper and the filling. 5. Working in batches, deep-fry the rangoons until golden brown and crisp, turning over a few times, about 2 minutes. When ready, remove them to a plate lined with paper towels to drain; sprinkle with sesame seeds and cover with aluminum foil to keep warm. Repeat for the remaining rangoons. 6. When ready to serve, divide rangoons between plates and serve with the dipping sauce and orange wedges on the side.

I love this dish I got it off of the T.V years ago and I make it often. I normally use a whitefish of some sort. Tilapia or Flounder are my favorites. I usually serve with rice and steamed vegetable. It's filled with flavor and is pretty easy to make. I could eat the stuffing all by it's self. A lot of times I double the stuffing but it's up to you what you think.
