Quick chicken couscous recipe - BBC Food image

This chicken couscous makes a quick and tasty dinner that will double as a decent packed lunch for tomorrow. Part of Rob's chicken meal prep series. Check out his chicken cashew curry and barbecue-style chicken wraps for the full set. Each serving provides 520 kcal, 37g protein, 67g carbohydrates (of which 12g sugars), 9g fat (of which 2g saturates), 11g fibre and 2.8g salt.

Number Of Ingredients 15

1 tsp finely chopped fresh coriander
2 tsp chilli powder
1 tbsp tomato purée
1 tbsp soy sauce
salt and freshly ground black pepper
2 tsp olive oil
200g/7oz chicken thigh fillets, cut into bite-sized pieces
150g/5oz broccoli, roughly chopped
1 red pepper, deseeded and thinly sliced
1 green pepper, deseeded and thinly sliced
4 spring onions, roughly chopped
200ml/7fl oz boiling water
150g/5oz couscous
½ lime, zest and juice
2 tsp finely chopped coriander

Steps:

  • Mix together the chicken seasoning ingredients in a large bowl. Add the chicken and coat well in the mixture.
  • Heat a teaspoon of the olive oil in a frying pan over a high heat, add the chicken and cook for 3 minutes, or until cooked through. Remove the chicken and set aside.
  • Pour the boiling water into a bowl, add the couscous, lime zest and a pinch of salt and pepper. Cover with a plate and leave for 5 minutes.
  • Heat a the remaining olive oil in the pan and cook the broccoli and peppers for 4 minutes.
  • Return the chicken to the pan with the spring onions and cook for 2 minutes.
  • Meanwhile, add the lime juice and coriander to the couscous, stir and put the plate back on for back on for 2 minutes.
  • Use a fork to fluff up the couscous, take the chicken off the heat and enjoy together!

The dressing in this 30-minute recipe is inspired by green goddess dressing and mast-o khiar, a Persian side dish of cucumbers and yogurt. Here, thick yogurt is combined with fresh herbs, tangy feta and crunchy Persian cucumbers. If you have trouble finding Persian cucumbers, they can be swapped for similarly sweet-skinned English cucumbers or peeled regular cucumbers. Flaking the salmon into the salad evenly distributes it and is a nice alternative to serving a fillet for dinner.   • Add the cooked couscous and arugula to the yogurt mixture, tossing to combine. Remove the salmon from the skin, then flake with a fork. Add half the salmon to the couscous, mixing it together. Place the remaining salmon on top, squeeze the roasted lime half over the dish, then garnish with the scallions, remaining feta, parsley and mint. Quarter the remaining lime half and serve it on the side.
