A quick and creamy carbonara-style tagliatelle that showcases delicious courgettes contrasted with cream and pancetta

1 tsp olive oil
150g diced pancetta or smoked bacon lardons
4 courgettes, coarsely grated
1 garlic clove, crushed
handful freshly grated parmesan
1 small tub (200g) low-fat crème fraîche
300g tagliatelle

Steps:

  • Heat the olive oil in a large frying pan and sizzle the pancetta or bacon for about 5 mins until starting to crisp. Turn up the heat and add the grated courgette to the pan. Cook for 5 mins or until soft and starting to brown then add the garlic and cook for a minute longer. Season and set aside.
  • Cook the tagliatelle according to the pack instructions and scoop out a cupful of cooking water. Drain the tagliatelle and tip into the frying pan with the bacon and courgette. Over a low heat toss everything together with the crème fraiche and half the Parmesan adding a splash of pasta water too if you need to loosen the sauce. Season to taste and serve twirled into bowls with the remaining Parmesan scattered over.

150 g dried linguine
2 mixed-colour courgettes
½ a bunch of fresh mint (15g)
30 g Parmesan cheese
1 lemon

Steps:

    1. Cook the pasta in a pan of boiling salted water according to the packet instructions, then drain, reserving a mugful of cooking water.
    2. Meanwhile, slice the courgettes lengthways, then again into long matchsticks with good knife skills or using the julienne cutter on a mandolin (use the guard!).
    3. Place a large non-stick frying pan on a medium-high heat with 1 tablespoon of olive oil, then add the courgettes.
    4. Cook for 4 minutes, tossing regularly, while you finely slice the mint leaves, then stir them into the pan.
    5. Toss the drained pasta into the courgette pan with a splash of reserved cooking water.
    6. Finely grate in most of the Parmesan and a little lemon zest, squeeze in all the juice, toss well, then taste and season to perfection with sea salt and black pepper.
    7. Dish up, finely grate over the remaining Parmesan and drizzle with 1 teaspoon of extra virgin olive oil before tucking in.

My Mum took my sister and I out to lunch in London the other day and we had Italian for lunch. I don't recall the name of the restaurant but the dish I had was fantastic! It was called Giardiniera I think and contained all the below but also had deep fried spinach and paremsan balls with it. I've been unable to replicate the spinach balls (I tried a baked version as well but that didn't work either) so I'm just listing the pasta and topping for now and maybe eventually I'll be able to get the rest right.

    1. Halve the courgettes lengthways, then finely slice at an angle. Peel and finely slice the garlic, then deseed and finely slice the chillies. Pick and roughly chop the herbs.
    2. Cook the pasta according to the packet instructions.
    3. Melt the butter with a splash of oil in a large frying pan on a medium heat. Add the courgettes and cook until slightly browned.
    4. Add the garlic, chilli and prawns, then cook until the prawns are cooked through. Take off the heat and squeeze over the lemon juice.
    5. Drain the pasta once cooked, reserving a little cooking liquid. Add the pasta to the frying pan and toss with the courgettes and prawns. Add some cooking liquid if it looks a little dry, then stir in the dill or parsley.
    6. Season to taste and serve at once, with a grating of Parmesan, if you like.
