Steps:
- For crust, in a large bowl, stir together the 1 cup flour, the 1-1/2 teaspoons sugar, the baking powder, and the 1/4 teaspoon salt. Cut in butter until mixture resembles coarse crumbs. Make a well in the center; add milk all at once. Stir just until dough clings together.
- On a lightly floured surface, roll dough into an 11-inch circle. Fit into bottom and up side of an ungreased 9x1-1/2-inch round baking pan. Trim crust even with top edge of pan. Bake the crust in a 350 degree F oven for 5 minutes. Set aside.
- For filling, in a large bowl, beat eggs. Stir in cottage cheese, the 1/3 cup sugar, the half-and-half, the 1 tablespoon flour, the vanilla, cinnamon, and the 1/8 teaspoon salt until combined. Pour filling into crust.
- Bake in the 350 degree F oven for 30 minutes or until center is nearly set when shaken.
- Cool the dessert on a wire rack for 1 hour. Cover and chill in the refrigerator for at least 4 hours. Makes 8 servings.
AUTHENTIC GERMAN KUCHEN | JUST A PINCH RECIPES
All cultures have some type of sweet dough and this German Kuchen is a great example. Kuchen is the German word for cake. The dough is slightly sweet and fluffy and tasty on its own. But, the toppings are where this recipe gets fun. The cinnamon topping is classic and almost like a cinnamon streusel. If you love cherries, try the cherry toppings. It's a wonderful complement to the bread. We'll admit, the butter topping had us confused. There's no butter! Once baked, it sinks to the bottom creates a buttery custard. Simple and so good, the apple is a great topping for fall. The apples bake perfectly and are filled with cinnamon spice. The cheese topping is similar to the butter one where it sinks to the bottom while baking. If you asked us which is our favorite, we wouldn't be able to single one out. They're all good in their own way. Each recipe makes one Kuchen, so keep one or two for yourselves and give another to a neighbor or family. Whichever Kuchen you choose to make, you'll enjoy a bakery-quality treat.

Steps:
- Dough: Scald milk and add butter, sugar, and salt. Dissolve yeast in warm water in a separate bowl and then add to milk mixture. Beat in eggs.
- Then add flour.
- Cover and let rise until doubled. About an hour.
- Punch down and divide into 5 pieces.
- Roll out into the desired shape and let rise 30 minutes. Then choose your topping. I used a 9" round cake pan for mine.
- Cinnamon Topping: Use a pastry blender to mix butter and brown sugar and flour. Add cinnamon and sprinkle over dough after it rises the second time.
- Dot with butter if desired.
- Bake at 375 for 20 minutes.
- Cherry Topping: Heat can of dark cherry pie filling.
- Spread on the crust after it rises a second time.
- Bake for 20 minutes at 375.
- Cheese Topping; Mix cottage cheese, egg, and sugar in a blender or bowl until creamy. Heat slowly until warm on the stove.
- Pour on the dough after rises a second time.
- Bake at 375 for 25 minutes.
- Butter Topping: Beat together sugar, eggs, and vanilla. Slowly beat in oil. Add oil too fast and it will curdle. Heat on top of stove until hot.
- Pour on the crust after the second rising.
- Bake 25 minutes at 375.
- Apple Topping: Roll this dough out in a rectangle.
- Peel and slice thinly 3 apples. Fill the center with apples and dot with butter. Sprinkle with cinnamon and sugar and nutmeg to taste.

This sounds great -- my ancestor's kuchen had a yeast dough base and a cottage cheese (like the consistency of quark) filling with fruit. I must put the recipe on, if I haven't already done so. Much more work than this though, but it would have a different taste. Must try this. Thanks!
