Green Chili Cornbread Recipe: How to Make It image

Number Of Ingredients 10

1 package (8-1/2 ounces) cornbread/muffin mix
1 large egg
2 tablespoons butter, melted
1 can (11 ounces) Mexicorn, drained
1 can (4 ounces) chopped green chilies, drained
1-1/2 cups shredded pepper Jack cheese
1/4 teaspoon hot pepper sauce
HONEY BUTTER:
1/2 cup butter, softened
2 tablespoons honey

Steps:

  • In a large bowl, combine cornbread mix, egg and butter. Stir in the corn, chilies, cheese and hot pepper sauce. , Pour into a greased 11x7-in. baking dish. Bake at 400° for 20-22 minutes or until a toothpick comes out clean. , In a small bowl, combine butter and honey. Serve with warm bread.

A Dense, moist green chile cornbread, made with hatch chiles, corn and cream cheese.

Number Of Ingredients 12

1 1/4 cups fine cornmeal
1 1/4 cups all-purpose flour
1 1/2 teaspoons salt
1 teaspoon baking soda
1 tablespoon baking powder
1/4 cup sugar
1/2 cup unsalted butter, softened
1/2 cup Softened Cream Cheese
2 large eggs
1 1/4 cups milk
2 cups chopped, roasted green chiles, or mild canned green chiles
1 cup creamed corn

Steps:

  • Preheat oven to 400°F. Grease two cast iron skillets or 13x9 baking dish.
  • Make the batter: In a large bowl whisk together the cornmeal, flour, salt, baking powder, and baking soda. In a separate bowl, beat the softened butter and sugar. Beat the cream cheese and eggs into the butter-sugar mixture. Add the milk and the dry ingredients, a third at a time, and alternating wet/dry. Mix in the green chiles and corn. Pour mixture into cast iron skillets or greased baking dish.
  • Bake at 400°F for 35 minutes, or until top is browned, and a fork inserted into the center comes out clean. Serve warm, not hot.
