Total Time 5 hours 0 minutes

Prep Time 30 minutes

Cook Time 4 hours 0 minutes

Yield 6 servings

Number Of Ingredients 12

6 turkey legs
3 tablespoons Worcestershire sauce
1 tablespoon vegetable oil
Dry Rub, recipe follows
Mop, recipe follows
Your favorite BBQ sauce, as needed, (recommended: North of the Border Chipotle BBQ Sauce)
1/4 cup chipotle seasoning, (recommended: North of the Border Chipotle Seasoning)
1 to 2 tablespoons mild dried ground red chili or paprika
1 tablespoon packed brown sugar
1 cup white vinegar
1 tablespoon BBQ sauce, (recommended: North of the Border Chipotle Barbecue Sauce)
1 tablespoon vegetable oil

Steps:

  • Several hours before planning on barbecuing, loosen the skin on the turkey legs by running your fingers under it as far as possible without tearing the skin.
  • Combine the Worcestershire sauce and the oil. Coat your fingers with the mixture and rub really well into the turkey legs, getting as much as you can under the skin. Sprinkle the Dry Rub over the skin, liberally rubbing into the turkey legs and under the skin. Place the legs in plastic bags and refrigerate.
  • Prepare the smoker for barbecuing, bringing the temperature to 200 to 220 degrees F. Remove the turkey legs from the refrigerator and let them sit at room temperature for about 30 minutes.
  • Re-warm the mop mixture over low heat.
  • Transfer the turkey legs to the smoker. Cook until the legs are very tender and the juices run clear, about 3 1/2 to 4 hours. Mop the legs at 45-minute intervals in a wood-burning pit, or as appropriate for your style of smoker. Serve the legs hot, to be eaten with your fingers, with a side of barbecue sauce.
  • Mix ingredients together in a small bowl.
  • Combine the mop ingredients in a small saucepan and warm the mixture over low heat.

How to Smoke a Turkey on a Grill | Smoked Whole Turkey ... image

Provided by Bobby Flay

Categories     main-dish

Total Time 9 hours 0 minutes

Cook Time 10 minutes

Yield 10 to 12 servings

Number Of Ingredients 6

1 fresh whole turkey (15 to 17 pounds), patted dry with paper towels
Canola oil, for brushing
Kosher salt and freshly ground black pepper
1 cup chicken stock
2 tablespoons honey
2 tablespoons apple cider vinegar

Steps:

  • Remove the turkey from the fridge and allow to sit for 30 minutes to 1 hour before cooking.
  • Meanwhile, prepare a charcoal grill or smoker for indirect heat, at approximately 275 degrees F. Sprinkle in wood chips (such as hickory, apple or pecan wood) that have soaked in cold water for at least 4 hours and up to 48 hours, and allow them to char before cooking.
  • Place the turkey in a roasting pan fitted with a rack. Brush the entire turkey with the oil and season liberally with salt and pepper.
  • Place the turkey in the grill or smoker and cook for 45 minutes.
  • Meanwhile, mix together the chicken stock, honey and vinegar. Baste the turkey after cooking for 45 minutes. Repeat the basting every 45 minutes until the internal temperature of the thigh registers 165 degrees F and the breast registers 155 degrees F, about 3 1/2 to 4 1/2 hours, depending on the size of the bird.
  • Remove the turkey to a large cutting board and let rest for at least 20 minutes before carving.

ROAST SPATCHCOCK TURKEY RECIPE - NYT COOKING
In 2002, Mark Bittman published this revolutionary approach to roasting the Thanksgiving turkey, which allows you to cut the cooking time of the average turkey by about 75 percent while still presenting an attractive bird. Simply cut out the backbone — or ask your butcher to do it for you — and spread the bird out flat before roasting, a technique known as spatchcocking that is commonly used with chickens. Roasted at 450 degrees, a 10-pound bird will be done in about 45 minutes. Really. It will also be more evenly browned (all of the skin is exposed to the heat), more evenly cooked, and moister than birds cooked conventionally.

CANTONESE-STYLE TURKEY RECIPE - NYT COOKING
This turkey, inspired by the flavors of Cantonese cooking, is roasted beneath a rich glaze of fermented soybean paste, garlic, ginger, soy sauce and alliums galore, then served with roasted potatoes basted in the sauce and drippings of the bird. It came to The Times from Dr. Carolyn Ling, a physician in Carmel, Ind., whose grandfather came to the United States in the late 19th century from southern China and set up an import-export firm in Manhattan. Her grandfather, Dr. Ling told me, also had “interests in restaurants.” Those interests played a big role in the Ling family’s early Thanksgiving feasts: They ate takeout. Dr. Ling’s father loved those meals. When Dr. Ling was young, she said, her father urged her mother, a passionate home cook and reader of Gourmet, to emulate them in her holiday cooking at home in Forest Hills, Queens. The result is remarkably easy to prepare, phenomenally juicy, and rich, Dr. Ling said, “with the umami of soy and turkey fat.”
