COCA-COLA PECAN PIE | JUST A PINCH RECIPES
I got this cake from a Coca-cola cook book my friend gave me. I make this a lot for my friends but I do not eat it myself because I don't like pecan's. I get a lot of complements on this pie. I usually make my own crust with it but the photo I used was one I used a frozen pie crust with. I still got a lot of thumbs up signs even though the crust was not homemade.

Steps:
- PREHEAT oven to 350 degrees. Unroll 1 pie crust and place in 9 inch pie plate. Unroll remaining crust and press over bottom crust; gently press crusts together. Fold edges under and crimp.
- STIR together eggs, sugar, corn syrup, Coca-cola, butter, vanilla and salt in large bowl; stir in pecans. Pour filling into pie crust. Bake 55 minutes or until set.
- SERVE warm or cold with ice cream, if desired.

- Preheat oven to 350°. Grease a 13x9-in. baking pan., In a large bowl, whisk the first 5 ingredients. In a small saucepan, combine cola, butter and cocoa; bring just to a boil, stirring occasionally. Add to flour mixture, stirring just until moistened., In a small bowl, whisk eggs, buttermilk and vanilla until blended; add to flour mixture, whisking constantly., Transfer to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean., About 15 minutes before cake is done, prepare glaze. In a small saucepan, bring cola to a boil; cook 12-15 minutes or until liquid is reduced to 1/2 cup. Stir in butter and cocoa until butter is melted; remove from heat. Add confectioners' sugar; stir until smooth. Pour immediately over hot cake.
