Enjoy the health benefits of both swordfish and asparagus in this tasty and nutrient-packed one-dish meal. Swordfish provides an excellent source of selenium, which has cancer-fighting and heart health benefits. Asparagus is filled with antioxidants, vitamin k, and can help improve digestive health. This dish is as delicious as it is healthy. Soy sauce is an ideal base for marinades and ups the flavor of this one. The marinade in this light, tasty dish also works well with cod or halibut. Grilled corn or peppers can be used instead of asparagus, too. Serve this dish with rice.

2 Tbsp Soy sauce
2 Tbsp Fresh lime juice
2 Tbsp Olive oil divided
1 Tbsp Canned tomato paste
1 Tbsp Fresh parsley fresh, chopped
1 medium clove(s) Garlic clove(s) minced
0.5 tsp Dried oregano
0.25 tsp Black pepper
1.5 pound(s) Uncooked swordfish fillet(s) four 6 oz pieces
1 pound(s) Uncooked asparagus trimmed
0.125 tsp Table salt or to taste
0.125 tsp Lemon pepper seasoning, or to taste

Steps:

  • Combine soy sauce, lime juice, 1 tablespoon of oil, tomato paste, parsley, garlic, oregano and black pepper together in a small bowl. Place fish in a glass dish; pour soy sauce mixture over fish. Marinate fish in refrigerator for 30 minutes and then turn fish over; marinate for 30 minutes more.
  • Preheat grill to medium. Place asparagus in a large bowl; drizzle with remaining tablespoon of oil and season to taste with salt and lemon pepper seasoning.
  • Place a large piece of aluminum foil on a flat surface. Wrap asparagus in foil and grill asparagus for 30 minutes. (Or place asparagus in a pan, cover and cook on grill.) Add fish to grill after asparagus has cooked for about 15 to 20 minutes. Cook fish until it easily breaks apart with fork, flipping once, about 10 to 14 minutes; serve immediately. Yields 1 swordfish fillet and 1/4 of asparagus per serving.

4 swordfish steaks
5 fresh plum tomatoes, diced
2 cloves garlic, minced finely
¼ cup flat leaf parsley, chopped
½ teaspoon dried oregano
1 Tablespoon brined capers, rinsed well
3 Tablespoons olive oil, divided
1 Tablespoon red wine vinegar
salt & pepper, to taste

Steps:

  • 1. Preheat oven to 425ºF. 2. Place the swordfish steaks in a greased baking dish. Brush the tops of the steaks with 1 Tablespoon of olive oil and sprinkle with salt and pepper to taste. 3. Bake, uncovered, for 12-15 minutes or until the fish flakes easily with a fork. 4. While the fish is baking, combine the tomatoes, garlic, parsley, oregano, capers, vinegar and 2 Tablespoons of olive oil in a bowl. Add pepper and just a sprinkling of salt. 5. Remove swordfish from the oven, plate and serve with the tomato mixture on top.
