My stepmother got this recipe from an 80-year-old woman back in the 1940's.

Number Of Ingredients 9

1 egg
½ cup all-purpose flour
½ cup milk
1 cup minced clams
¼ teaspoon salt
? teaspoon ground black pepper
2 tablespoons minced onion
2 tablespoons minced green bell pepper
½ cup vegetable oil

Steps:

  • Beat the egg and gradually beat in the flour. Slowly stir in the milk, clams, salt, pepper and onion. If desired, stir in the green pepper. With hands shape mixture into 2 inch diameter patties.
  • In a medium skillet heat the oil over medium-high heat until hot. Fry the patties in the hot oil until golden brown. Place cooked fritters on paper towels to soak up any excess oil.

Cockles are commonly known as hairy clams and hemp clams. They belong to the phylum Soma, Braniobranchida, Cockles, Clamaceae, and Clam genus. They are mainly distributed along the coasts of China, Korea and Japan. There are more coastal waters in the Bohai Sea and East China Sea. They live in the sandy bottom of the shallow water in the inner bay at a depth of more than ten meters, especially near the estuary where fresh water flows out, mostly 4-8 meters.
The adult shell is 4-5 cm long, and the shell surface is swollen into an oval shape. The two shells are unequal, with the top of the shell protruding and inwardly rolled and leaning forward; 30-44 radial ribs on the shell surface, with small square nodules appearing on the ribs; The hinge is straight and has about 50 teeth; the shell is white with brown hairy epidermis.
Edible shellfish with high vitamin B12 content.

2 tablespoons Soy sauce
1 tablespoon Balsamic vinegar

Steps:

  • Ingredients: Cockles (washed), minced garlic
  • In the minced garlic, add 2 tablespoons light soy sauce
  • Add 1 tablespoon balsamic vinegar
  • Mix thoroughly into dipping sauce
  • Then, pour the boiled water over the cockles
  • Then, close the lid and soak for 15-20 seconds
  • Finally, open the lid and pour out the water
  • Put it on the plate and enjoy it beautifully. . .
