FOR THE STREUSEL:
1/2 c. Unbleached All-purpose Flour
3 tbsp. Lightly Packed Brown Sugar
1 1/2 tbsp. Dutch-process Cocoa
4 tbsp. Unsalted Butter, Cold And Cubed
1/3 c. Mini Semisweet Chocolate Chips
FOR THE MUFFINS:
1 3/4 c. Unbleached All-purpose Flour
2/3 c. Dutch-process Cocoa
1 tsp. Baking Powder
1 tsp. Baking Soda
3/4 tsp. Kosher Salt
2 Eggs
1 c. Sugar
1 c. Chocolate Milk
1/2 tsp. Espresso Powder
2 tsp. Vanilla Extract
1/4 tsp. Almond Extract
2 tsp. White Vinegar
4 tbsp. Unsalted Butter, Melted And Cooled
3 tbsp. Vegetable Oil
1 c. Semisweet Chocolate Chips (Regular Size)

Steps:

  • Preheat oven to 425ºF. Line 12 muffin cups with liners. For the streusel: Stir flour, brown sugar, and cocoa. Add cubed butter and distribute through the mixture, using your fingers to mash the butter into smaller bits. Once the butter chunks are more like flat pellets and evenly dispersed, stir in chocolate chips. Set aside. For the muffin batter: In a large bowl, whisk flour, cocoa, baking powder, baking soda, and salt. In a large measuring cup, whisk eggs lightly. Add sugar, chocolate milk and espresso powder, whisking until combined. Add extracts and then vinegar, and whisk again. Pour wet ingredients, melted butter, and oil into the bowl with the dry ingredients. Stir until combined. Fold in chocolate chips. Spoon batter into prepared tin. The liners will be full. Press a generous sprinkling of chocolate streusel onto each muffin. (Reserve any remaining streusel and refrigerate for another use.) Bake for about 18 minutes, or until muffins bounce back when pressed in the center. Cool in pan for 5 minutes, then remove to a cooling rack. Serve warm or at room temperature.

From the Nestle Chocolate website. When you need that chocolate fix but want more than just a chocolate chip cookie then these may do the trick. I printed this recipe off in 1999 - and I remember my choco-holic daughter just loving these muffins. Unfortunately time and my unorganized printed out recipe collection has not allowed me to make these in a while but that will all change now.

1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar, packed
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter, melted (1 stick)
1/2 cup milk
1 egg, lightly beaten
2 cups semi-sweet chocolate chips (a 12-oz package)
1/3 cup brown sugar, packed
3 tablespoons all-purpose flour
1 tablespoon butter, melted
1/4 cup nuts, chopped (I have used walnuts and almonds)

Steps:

  • For muffins: combine the flour, sugar, brown sugar, baking powder and salt in a large bowl.
  • Stir in butter, milk and egg just until moistened.
  • Stir in chocolate chips.
  • Spoon batter into 12 greased or lined muffin cups.
  • For streusel: combine brown sugar, flour and butter in a small bowl then stir in nuts.
  • Sprinkle generously over muffin batter and press down lightly to adhere.
  • Bake at 350F for 20-25 minutes or until pick comes out clean from center of muffin.
  • Let cool in pan for 15 minutes before removing to a wire rack to cool completely.
