Ingredients

2?¼ cups all-purpose flour
1 teaspoon baking soda
1 cup butter, softened
¾ cup packed light brown sugar
¼ cup white sugar
1 (3.4 ounce) package instant butterscotch pudding mix
1 teaspoon vanilla extract
2 eggs
12 ounces semisweet chocolate chips
1 cup chopped walnuts

Steps:

Preheat oven to 375 degrees F (190 degrees C).
Combine the flour and baking soda. Set aside.
Mix the butter, brown sugar, white sugar, pudding mix, and vanilla. Beat until creamy. Add the eggs and mix well. Gradually stir in the flour mixture. Stir in the chocolate chips and the chopped nuts. Drop from teaspoon onto ungreased cookie sheets about 1 inch apart.
Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes.

1 cup packed brown sugar
1 cup white sugar
1 cup butter
2 eggs
2?½ cups all-purpose flour
1 teaspoon baking soda
1?? cups butterscotch chips
2 cups crushed potato chips

Steps:

Preheat oven to 350 degrees F (180 degrees C).
Cream together sugars and butter or margarine. Beat in eggs, add flour and baking soda, mix well.
Fold in butterscotch chips and potato chips.
Drop by tsp. on cookie sheet and bake for 8 to 10 minutes.

Preheat oven to 325 degrees. In a medium bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Mix until well-blended. In the bowl of an electric mixer, combine eggs and sugar, and beat on medium-high until smooth and pale, about 1 minute. Beat in the oil, pumpkin puree, and vanilla extract and mix until well-combined. Turn the mixer down and slowly blend in the flour mixture until just incorporated. With a rubber spatula, gently fold in the butterscotch and chocolate chips. Using a medium-sized ice cream scoop, place mounds of cookie dough on a cookie sheet lined with parchment paper, about 2 inches apart. (The cookies will spread.) Allow to bake about 15 minutes, until the cookies are springy to the touch. Allow to cool.
