½ cup pecans, finely chopped
1?½ cups chocolate wafer cookies, crushed
? cup butter, melted
½ cup semi-sweet chocolate chips, melted
Filling:
2 (8-oz.) pkgs. cream cheese, softened
1?½ cups semi-sweet chocolate chips, melted
1 cup brown sugar, packed
4 eggs
1 cup sour cream
? cup cold coffee
2 tablespoons vanilla extract
Topping:
? cup whipping cream
¼ cup sugar
½ cup semi-sweet chocolate chips

Steps:

  • Mix pecans, cookies and butter together; press into the bottom and up the sides of a greased 9" springform pan. Drizzle with chocolate; chill until chocolate is firm.
  • Pour filling into crust; bake at 300° for one hour and 10 minutes. Cool completely. Cover and chill 8 hours. Spread topping over cake. Remove sides of pan.
  • Filling: Combine all ingredients; blend until smooth.
  • Topping: Heat whipping cream and sugar over low heat, whisking constantly. Add chocolate chips, whisking until smooth.

Velvety smooth, sinfully rich, baked in a crisp cookie crust, this is a delightful cheesecake, a sure-fire sweet finale to any dinner party. I found this on a My Great Recipes, recipe card. I'm posting this for a request. I have not tried this recipe.

8 inches chocolate, crust
3 -8 ounces cream cheese, room temp
1 cup sugar
3 large eggs
8 ounces semisweet chocolate
2 tablespoons whipping cream
1 cup sour cream
1/4 teaspoon salt
2 teaspoons instant espresso coffee, dissolved in 1/4 c hot water
1/4 cup coffee liqueur
2 teaspoons vanilla extract
1 cup whipping cream
2 tablespoons powdered sugar
2 tablespoons coffee liqueur
1 ounce chocolate

Steps:

  • Prepare chocolate crust. Set aside.'
  • Beat cream cheese until smooth. Gradually add sugar, mixing until well blended. Add eggs, one at a time. Beat at low speed until very smooth.
  • Melt chocolate with cream over boiling water, stirring until smooth. Add to cheese mixture, blending well. Add sour cream, salt, coffee liqueur and vanilla, beating until smooth.
  • Turn into prepared pan. Bake in center of oven at 350 for 45 minutes or until sides are puffed. Center will be soft but will firm up when chilled. Turn oven off; leave door ajar. Allow cake to cool in oven for 45 minutes. Cover and chill for 12 hours. Remove sides of pan.
  • Whip cream. Flavor with sugar and liqueur. Garnish with mounds of whipped cream and chocolate leaves.
  • Chocolate Leaves: Melt 1oz chocolate. Brush real leaves with chocolate. Freeze until firm. Peel off. Freeze until needed.

    To make the base, melt the chocolate and butter in a wide-based pan over a medium heat (see note). Remove the pan from the heat, add the crushed biscuits and stir to combine. Press into the base of the tart tin and chill in the fridge while you make the filling.

    To make the filling, place the chocolate and butter in a large heatproof bowl and add the coffee and double cream. Set the bowl over a pan of just simmering water and heat until runny, stirring gently until smooth. Remove from the heat and allow to cool down a little, then mix in the crème fraîche by hand.

    Carefully pour the mixture into the tin on top of the biscuit base and chill for a minimum of 2 hours, or ideally overnight, until set.

    Remove the tart from the tin and place it on a cake stand or plate.

    Serve straight from the fridge.

    To decorate, spoon the whipped cream into a piping bag (if using) and pipe or dollop five large blobs of the cream into the middle of the tart. Sprinkle over the chocolate shavings or grated chocolate and serve in thin slices.

    • You’ll need full-fat crème fraîche for this recipe to help the filling set.
