Sweet Biscuit Chocolate Roll Recipe - Food.com image

A quick sweet snack that is very popular in Greece and there are many different recipes. This is my favorite.

Prep Time 20 minutes

Number Of Ingredients 7

250 g margarine
260 g powdered sugar
3 tablespoons cocoa
2 eggs
3 tablespoons walnuts
1 tablespoon brandy
350 g any kind cookies (I buy a petit beurre biscuits or digestive biscuitscrumbs, graham crackers are suitable)

Steps:

  • Cut by hand the biscuits in crumbs. Chop the walnuts.
  • Melt the margarine in a small pot and then add the sugar and the cocoa. Stir with a spoon until well mixed.
  • Beat the eggs and put them to the margarine mixture; stir.
  • And finally add the biscuits crumbs and the walnuts. Stir until they are mixed.
  • Cut a piece of parchment paper about 13x18" size. Arrange the cookie-mixture as a roll in the middle of the paper and roll.
  • Put the roll into the freezer for a couple of hours.
  • Then remove and store at the fridge. Enjoy!
  • Cooling time is not included!

I never heard of "Chocolate Rolls" until I married my husband. These were a family favorite when he was growing up so I eventually learned how to make them even though my mother-in-law did not use a recipe..I prepare mine a little differently than she did, but the taste is the same and they became a family favorite in our house also.

Number Of Ingredients 7

4 cup(s) all purpose flour
1/4 teaspoon(s) salt
1 1/2 cup(s) shortening
7 1/2 ounce(s) water
3/4 cup(s) margarine
1/4 cup(s) cocoa, unsweetened
2- 2 1/4 cup(s) sugar

Steps:

  • In large mixing bowl, combine flour, salt, and shortening with pastry blender until mixture is crumbly.
  • Gradually add water until dough forms and holds together.
  • Prepare filling in small saucepan. Melt margarine and stir in cocoa and enough sugar to make a spreading consistency paste. Leave pan on lowest heat and stir occassionally while completing rolls.
  • Separate dough into small handfuls. Roll into a ball and then flatten on floured surface. Roll out to form a thin round crust.
  • Place a heaping tablespoon of chocolate mixture on the dough and spread to within about 3/4 in. of outside edge of the dough. Roll dough up lengthwise and seal up the ends and fold them over to the top.
  • Place on ungreased cookie sheet. Repeat until all dough is used.
  • Bake at 375 degrees for 25 min. or until crust is lightly browned.
