For those that like a hotter taco sauce, or those who open a can for 1 T. sauce-what do you do with the rest? I use this sauce from tacos and fajitas to a marinade for brisket, and a mop for steaks and burgers.

Number Of Ingredients 5

1 (11 ounce) can chipotle chiles in adobo
4 tablespoons vinegar
1 tablespoon white sugar
3 tablespoons tomato paste
1 cup water

Steps:

  • In a blender or food processor add the chipotle peppers in adobo, vinegar, sugar and tomato paste.
  • Cover with lid and puree until smooth.
  • With blender or food processor running add a slow stream of water until you reach the desired thickness of your perfered taco sauce.
  • You may wish to use less or add more water than 1 cup.
  • This keeps in the fridge for 1 month.

1 can fire-roasted diced tomatoes in juice
3 chipotle chiles in adobo sauce
2 tbsp. adobo sauce
1 1/2 tbsp. fresh oregano leaves
2 clove garlic
1/2 tsp. ground cumin

Steps:

  • Pulse fire-roasted diced tomatoes, chipotle chiles, adobo sauce, oregano leaves, garlic, and ground cumin in a blender or food processor until sauce is almost smooth (you want it to have a few small chunks). Season with coarse salt to taste. (Can be made up to 2 days ahead and refrigerated). Use to fill build-your-own tacos.

  • In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel., In a food processor, cover and process tomatoes in batches until finely chopped. Transfer to a Dutch oven. Add brown sugar, vinegar, chipotle peppers and salt. Fish Taco: 1. In a medium size dish or bowl whisk together corn starch and all of your spices; salt, pepper, garlic, cumin and chili powder. 2. One at a time, dip each piece of tilapia in the corn starch mixture, coating all sides. Place coated fish on a baking sheet or large plate and set aside for frying. 3. Heat a large frying pan or cast iron skillet on medium high heat. Once the pan is hot, coat with 2 tablespoons of olive oil. 4. Carefully, place fish in hot oil and cook for 4 minutes and flip (depending on thickness of fish - thinner pieces will cook for less). Fry for an additional 3 to 4 minutes. Fish is done when both sides are golden brown (Fry the tilapia in batches to avoid overcrowding the pan). Remove and place on a draining rack. 5. Enjoy right away or keep warm in a 200 degree F oven.
