- Preheat the oven to 120°C (approximately 250°F). Peel and finely chop the garlic and mix together with the brandy and wine, set the marinade aside. Rinse the meat, pat dry and cut the skin into diamond shapes without cutting through to the flesh, season with salt and pepper. Heat the clarified butter in a large skillet and cook the pork until browned all over, 6-7 minutes per side, remove.
- Add the pine or pine needles to the pan and place the meat on top. Add the unpeeled garlic bulb and the onions and roast until the meat is tender, brushing frequently with the marinade, about 2 1/2 hours. Turn the oven to broil during the final 10 minutes of cooking and broil until the skin is crispy. Serve immediately.

- Place all the ingredients in a large boiling pot and cover with water. Bring water to a boil over medium-high heat and then reduce heat to a simmer.
- Cover the pot with a lid and allow pigs feet to cook until tender, about 3 hours. While your meat is cooking stir constantly and skim away any foam that develops.
