Dong Po (Chinese Pork Belly) Recipe | Allrecipes image

Named after an ancient Chinese statesman, poet and gourmand of the Song Dynasty, the pork belly is cooked three different ways, rendering the meat succulent, tender and very flavorful. (If you can't find pork belly, ask the butcher; it is what bacon is before it is cured and sliced.)

1 pound raw pork belly
3 tablespoons vegetable oil
¼ cup light soy sauce
¼ cup dark soy sauce
½ cup Chinese rice cooking wine
3?½ ounces Chinese rock sugar
1 (1 inch) piece fresh ginger, peeled and grated
8 spring onions, sliced

Steps:

  • Slice the pork belly into 2-inch wide strips. Bring a large pot of water to a boil, and stir in the pork slices; reduce heat to a simmer, and cook the meat for 10 minutes. Remove from the water, and blot dry with paper towels.
  • Heat the vegetable oil over medium-high heat in a large wok, and brown the pork strips well on all sides. Pork will splatter - use a splatter shield for this step.
  • While pork is browning, mix together the light soy sauce, dark soy sauce, rice wine, rock sugar, ginger, and spring onions in a large soup pot or stockpot. Bring the mixture to a boil, stirring to dissolve the sugar. Reduce heat to a gentle simmer, and lay the pork strips into the liquid. Cover, and simmer until the meat is very tender, 1 1/2 to 2 hours. Add water as needed to keep the liquid from going completely dry.

Sticky Chinese-style pork belly or Char Sui, is one of the most popular Chinese/Cantonese dishes. The marinating time gives the meat a good depth of flavour and a lovely sweet and salty contrast really compliments the pork. Goes perfectly with some simple steamed rice.

80mls hoisin sauce
80mls soy sauce
2 tbsp rice wine vinegar
2 tbsps honey
2 tbsps soft light brown sugar
1 tbsp minced garlic
1/2 tsp Chinese 5 spice powder
500g pork belly slices
6-8 spring onions - finely sliced
1 tbsp sesame seeds
2 small red chillies

Steps:

  • Combine all the ingredients for the pork - except the pork itself. Whisk together in a small bowl and set aside half the sauce for later. 

    Add the pork to the remaining sauce and make sure all the meat is covered, cover and let the meat marinate for at least 1-3 hours - the longer the better, overnight is ideal. 

    When youre ready to cook, pre-heat your grill to a medium heat, 180 degrees. Drain the pork and discard the marinade. 

    Place the slices of pork onto a shallow baking tray lined with foil. Cook for 15-20 minutes, basting 3 or 4 times throughout and flip half way through - until the pork becomes beautifully caramelised on both sides.

    leave to cool slightly before serving with the spring onion, sesame seeds and a drizzle of the original marinde.
