shrimp, peeled and deveined

1/2 c.

lime juice

Zest of 1 lime

1/4 c.

plus 1 tbsp extra-virgin olive oil

cloves garlic, minced

1 tsp.

chili powder

1/2 tsp.

chili flakes

1/2 tsp.

ground cumin

1 tsp.

kosher salt

1/4 c.

freshly chopped cilantro

lime, cut into wedges, for serving

Steps:

  • In a large bowl, whisk together lime juice, 1/4 cup olive oil, garlic, chili powder, chili flakes, cumin, and salt. Add shrimp to marinade, cover with plastic wrap, and refrigerate 30 minutes. Heat remaining oil in a large skillet over medium-high heat. Add shrimp and cook until pink and opaque. Remove from heat and stir in cilantro. Season to taste with salt and serve immediately with lime wedges.

1 large sweet pepper, diced
2 garlic cloves, minced
1 (15 ounce) can black beans
1 (15 ounce) can red beans
1 (15 ounce) can pinto beans
1 (15 ounce) can diced tomatoes with green chilies
1/2 lb small shrimp
2 tablespoons olive oil
1 tablespoon Old Bay Seasoning
1 teaspoon chili powder
1/4 teaspoon red pepper flakes

Steps:

  • In large stock pot, add olive oil, pepper, onion and garlic and saute for several minutes.
  • Add all other ingredients except shrimp.
  • Reduce heat to low, cover and simmer for 30 minute.
  • 10 min before serving, add shrimp, and cook until just pink.
  • Serve with grated cheese if desired.
