[Leftover] Char Siu Lo Mein | Cook Smarts image

Use leftover roasted pork from earlier in the week to make this noodle stir-fry that is full of colorful vegetables. Smarts: Cabbage can take a long time to cook and will reduce considerably in the process. Things will go faster if you are using very thinly sliced cabbage or coleslaw mix. Adjust the time as needed so that all of your vegetables are tender to your liking, but don’t rush it - the cabbage will be best when it's super tender and has almost a silky texture.

8 oz Carrots, thinly sliced
8 oz Cabbage, green, thinly sliced (sub coleslaw mix)
2 stalks Green onions, finely chopped, green and white parts separate
1 1/2 lbs Char siu pork (leftover from Monday), chopped
1 Tbsp Oil, cooking
8 oz Noodles, dried lo mein (sub spaghetti)
8 oz Snap peas (sub snow peas)
for serving Hot sauce (opt)
2 cloves Garlic, chopped
1/4 cup Water
3 Tbsp Hoisin sauce
1 Tbsp Soy sauce, low-sodium
1 Tbsp Vinegar, rice
1 tsp Cornstarch

Steps:

  • Bring a large stockpot of salted water to a boil.
  • While water is coming to a boil, heat a wok with oil over medium-high heat. Add carrots and saute until nearly tender, 3 to 5 minutes.
  • Add cabbage to carrots and saute both together until very tender, 5 to 7 minutes. Add water to the pan if it starts to look dry.
  • Meanwhile, return to the pot of water and add noodles. Boil noodles according to package directions. Drain.
  • When carrots and cabbage are tender, season them with some salt. Add white parts of green onions, snap peas, and pork. Saute to warm everything, 3 to 4 minutes more.
  • Whisk cornstarch into stir-fry sauce.
  • Add stir-fry sauce and noodles to wok and toss everything together until combined.
  • Remove from heat and stir in green parts of green onions.
  • Serve lo mein with some hot sauce if you’d like. Enjoy!

210 gm fresh thin egg noodles, shaken to loosen
60 ml (¼ cup) vegetable oil
3 spring onions (white part only), cut into julienne
30 gm ginger, cut into julienne
200 gm char siu (barbecue pork), thinly shredded
300 ml chicken stock
60 ml (1/4 cup) oyster sauce
1 tsp dark soy sauce
½ tsp sesame oil

Steps:

  • Cook noodles in a large saucepan of boiling water until al dente (2-3 minutes). Drain, refresh under cold running water and set aside to drain, then toss with 1 tbsp vegetable oil in a bowl to prevent sticking. Set aside.
  • Heat remaining oil in a wok over high heat, add spring onion and ginger and stir-fry until fragrant (20 seconds), then add char siu and stir to warm through (1 minute). Add stock, oyster sauce, dark soy and sesame oil, and bring to the boil, stir in noodles and serve warm.

I have varied the vegetables in the chow mein depending on what I could get. I love adding dried shiitake mushrooms which I pre-soak in hot water before shredding. Sometimes, I don't deep-fry the noodles (for the sake of my weight conscious DH) - both ways the sauce works out fine.
