6 tomatoes
1 small red onion, Diced fine
2 -3 garlic cloves, minced
1 carolina reaper pepper, stemmed, seeded and diced very fine
1/4 cup chopped cilantro
1/2 teaspoon salt (to taste)

Steps:

  • Core the tomatoes and remove most of the seeds; Place into food processor.
  • Mix remaining ingredients into food processor.
  • Blend to desired consistency.
  • Let the salsa stand for an hour or so before serving.

Number Of Ingredients 8

2 cups tomatoes diced you can use the canned version if necessary Make sure you use fire roasted though for this taste
1/4 white onion sliced thick
2 lg or 3 md garlic cloves unpeeled ends cut
5-6 sprigs fresh cilantro stems included
1 Carolina Reaper Pepper
1-2 tbs tomato paste
4 tsp water if you rehydrated a dried Pepper use some from the remaining liquid
1 tsp salt

Steps:

  • Slice your tomatoes in half (through the center so you have a top half and a bottom half). Next, slice your onion into a couple chunks (not too thin). Then cut the ends off your garlic cloves but leave the husks on. And finally, take your Reaper and place all onto a baking sheet and set your oven to broil. (If you rehydrated your pepper, squeeze the water out first).
  • Broil on the top rack. Your pepper and garlic will blacken first so take those out when they are charred nicely but not burned. Confined to cook the tomato and onion until the tomato is mostly black.
  • While your veggies and peppers are cooking, add your cilantro sprigs, tomato paste and salt to a food processor.
  • When your tomatoes and onions are done, remove from oven and place them, along with all the tomato juices that are on the baking sheet, into the processor. Process well so that your pepper is dispersed enough in the salsa. (You DO NOT want to get a big chunk of that pepper all at once!)
  • Place in an airtight container and refrigerate for at least an hour before eating for best flavor.
