4 black tea bags
10 whole cardamom seeds
2 cinnamon stick, broken in half
1 teaspoon black peppercorns
3 tablespoons white sugar

Steps:

  • In a saucepan, bring water to a boil. Add the tea bags, cardamom seeds, cinnamon, and black pepper, then return to a boil. Immediately stir in sugar.
  • Remove pot from heat and let stand for 5 minutes.

cardamom pods, crushed with the skin still on

bags English breakfast tea

1/2 c.

whole milk, warmed, plus more if needed

4 tsp.

sugar, plus more if needed

Steps:

  • 1. Bring 4 cups water to a boil. Add cardamom and boil 1 minute. Add tea bags and turn off heat. Cover and let steep 4 minutes (the tea will become almost black in color). Stir in milk and sugar until sugar has dissolved. Taste and adjust the milk and/or sugar if needed. 2. Discard tea bags, then, using a tea strainer or mesh sieve, strain the chai into 4 individual cups.
