I needed another quick fix for chocolate but had to make without nuts for DH. So I chose golden raisins and they were a hit!

Total Time 50 minutes

Prep Time 5 minutes

Cook Time 45 minutes

Yield 30-40 pieces

Number Of Ingredients 3

12 ounces milk chocolate
2 ounces white chocolate (I used a candy bar)
8 ounces raisins (can use more or less or combine with nuts)

Steps:

  • Put chocolate ( milk and white) in crock pot on low.
  • stir after 30 minutes to blend.
  • continue cooking 10 minutes.
  • add in raisins, blend.
  • with teaspoon drop onto wax paper.
  • let cool.
  • enjoy!

These luscious brownies are made extra special with a gooey topping of melted caramels, chocolate-covered raisins, walnuts and toasted coconut.

Number Of Ingredients 6

1 (19 oz) pkg fudge brownie mix
1 (14 oz) pkg Kraft caramels
3 tbsp. of water
0.75 c. of chocolate-covered raisins
0.5 c. of chopped Planters walnuts, toasted
0.5 c. of Baker's Angel Flake coconut, toasted

Steps:

  • 1. Prepare and bake brownie mix in 13-by-9-inch pan as directed on package for cake-like brownies.
  • 2. Microwave caramels and water in microwaveable bowl on HIGH 2-1/2 to 3 minutes or until caramels are completely melted, stirring after each minute. Pour over warm brownies; sprinkle with raisins, nuts and coconut.
  • 3. Cool completely on wire rack; cut into bars.
  • 4. Variation: Prepare as directed, using chopped Planters pecans and/or substituting 6 ounces chopped Baker's semi-sweet baking chocolate for the chocolate-covered raisins.
  • 5. How to toast coconut: Just spread Baker's Angel Flake coconut evenly in shallow baking pan. Bake at 350 degrees for 7 to 10 minutes or until lightly browned, stirring frequently. Or, spread in microwaveable pie plate. Microwave on HIGH 3 minutes or until lightly browned, stirring every minute. Watch carefully as coconut can easily burn!
  • 6. How to toast nuts: Toasting nuts adds crunch and intensifies their flavor. To toast nuts in the oven, spread nuts in single layer in shallow baking pan. Bake at 350 degrees for 8 to 10 minutes or until golden brown, stirring occasionally. To toast nuts on the stovetop, place nuts in ungreased skillet. Cook on medium heat until golden brown, stirring frequently. To toast nuts in the microwave, place up to 1 cup of nuts in a microwaveable shallow dish. Microwave on HIGH until fragrant and crisp, stirring every 30 seconds.

  • 1. Place the Sun-Maid California Sun-Dried Raisins, rum, and cinnamon in a small, heat-proof bowl; cover and microwave for 90 seconds on high until the raisins are plump. 2. In the bowl of a stand mixer fitted with a whisk attachment, whip the heavy cream, pudding mix, sugar, vanilla and salt on medium speed until thick and mousse-like; stop the machine and scrape down the side of the bowl as needed to prevent any lumps. Reserve 1 cup of the whipped vanilla cream; this will be used as the garnish later. Fold the rum-soaked raisins into the remaining cream. 3. Lightly spray a 9-by-5-inch loaf pan with nonstick cooking spray and line with plastic wrap to come all the way up the sides of the pan. Scoop a third of the raisin-vanilla cream into the pan and spread into an even layer; drizzle half of the caramel sauce on top. Arrange 9 Biscoff cookies over the caramel in a single layer (you may have to break some of the cookies to fit). Repeat this layering process (cream?caramel sauce?cookies) once more. Top with the last third of cream and smooth the surface evenly with the back of a spoon or an offset spatula. Wrap tightly in plastic wrap and refrigerate until set and the cookies are fully softened, at least 8 hours. 4. Tug the plastic wrap to loosen the cake from the pan. Invert onto a serving platter and peel away the plastic wrap. Top with the reserved whipped vanilla cream and a drizzle of extra caramel sauce. Note: The cake can be made up to 2 days ahead. Store any leftovers airtight in the refrigerator.
