Total Time 11 hours 0 minutes

Cook Time 1 hours 0 minutes

Yield 30 servings

Number Of Ingredients 14

1 whole pork butt, cut into 6 to 8 pieces
4 whole hocks, fresh
1 whole onion, peeled and halved
3 stalks celery, roughly chopped
1 tablespoon black peppercorns
4 bay leaves
3 tablespoons kosher salt
2 tablespoons ground black pepper
1 tablespoon cayenne pepper
1 tablespoon chopped fresh sage
3 cups white cornmeal
3 cups yellow cornmeal
Clarified butter, for pan-frying
Applesauce or maple syrup, for serving

Steps:

  • To a large stockpot, add the pork butt, hocks, onion, celery, peppercorns and bay leaves. Barely cover with water and simmer over low heat until the pork is tender and the meat falls off the bones, about 2 hours.
  • Drain and reserve the stock. Pour the solid contents onto a baking sheet so that you can easily discard the celery, onions, peppercorns, bay leaves and all of the bones. Make sure to pull the meat completely off the bones, being careful to remove all the small pieces of bone.
  • Add the meat to a food processor with the blade attachment and pulse to coarsely chop. Don't over grind it.
  • Measure 1 gallon of stock and return it to the pot along with the chopped meat and the salt, ground black pepper, cayenne, and sage. Bring to a simmer over low heat.
  • Add the cornmeal and stir, stir, stir. Simmer until smooth and thick, about 15 minutes. Add a little stock or water, if needed, to ensure a smooth texture.
  • Pour into 3 loaf pans and refrigerate until solid, preferably overnight.
  • Unmold, slice and fry in clarified butter until golden brown. Serve with applesauce or maple syrup.

Homemade Scrapple – A Coalcracker in the Kitchen image

Provided by A Coalcracker in the Kitchen

Categories     Entree    Breakfast

Number Of Ingredients 10

2 pounds lean pork with bone
2 quarts water
1 tablespoon salt
black pepper, to taste
1-1/2 teaspoons dried thyme
2 teaspoons rubbed sage
1 teaspoon ground savory
1 cup cornmeal, fine
1/2 cup buckwheat flour
OPTIONAL: add a small amount of pork liver to the pork when cooking to add even more authentic flavor

Steps:

  • Put meat in pot, add 1-1/2 quarts of water, salt and pepper. Simmer until meat is very tender, 2 to 2-1/2 hours. Skim fat from top, strain the broth and set aside.
  • Remove meat from bones and chop it very fine using a food processor or by hand.
  • Pour broth into sauce pan, add meat, thyme, sage and savory and bring to boil.
  • Combine cornmeal and buckwheat. Slowly stir 2 cup cold water into mixture. Then add that mix a little at a time to meat, keeping it simmering continuously. Lower heat so scrapple will not scorch, stirring occasionally and watching carefully. Stir until mixture reaches the consistency of soft mush. (wooden spoon stands up in mixture).
  • Pour into two 9" X 5" X 3" pans, rinsed with cold water or lined with parchment strips to help with releasing from the pan. Chill thoroughly. Remove from pans and wrap loaves tightly with plastic wrap
  • To Serve

FRENCH ONION SOUP RECIPE - NYT COOKING
In 1954, what was then called the Food News Department of The New York Times released a pamphlet simply called “Soups,” which had 20 recipes for soups “thick and thin, hot and cold,” including those for minestrone, shrimp bisque and this French onion soup. We’ve updated the recipe adding sherry and wine to layer in more flavors. The bulk of the time is spent on caramelizing the onions, a process that always takes longer than it seems it should. But it’s worth the wait.
