Turn simple canned spinach into a flavor-packed dish in this easy recipe, with the help of chicken stock, bacon, and onions.

Number Of Ingredients 9

2 slices cut into 5 to 6 pieces each bacon
2 chopped onion
1 clove chopped garlic
14½ oz (1 can) drained well spinach
½ cup chicken stock
1 tsp white granulated sugar
2 tsp like Franks or Texas Pete hot sauce
2 tsp white vinegar
to taste salt and pepper

Steps:

  • In a medium-sized saucepan over medium heat, add the cut-up slices of bacon and allow those to cook till crispy. Do not pour off the bacon grease.
  • Add the onion and garlic and allow to cook for about 3 minutes until fragrant and softening.
  • Pour in the drained spinach, stock, sugar, hot sauce, and vinegar and stir well.
  • Stir frequently and continue to heat over medium heat until heated through.
  • When heated through, the greens are ready to serve, taste first and add salt and pepper until satisfied with the taste. Enjoy!

Spinach is one of my favorite vegetables. When I found this in a food magazine (one of the free magazines you get here at the supermarket) I immediately had to try it.

Number Of Ingredients 4

2 lbs fresh spinach, washed
1/2 tablespoon butter or 1/2 tablespoon margarine, melted
2 teaspoons balsamic vinegar (dark or white)
salt and pepper

Steps:

  • Cook spinach with water that clings to it 3-5 minutes or until leaves begin to wilt.
  • Remove from heat and drain thoroughly.
  • Season with salt and pepper to taste.
  • Combine melted butter (margarine) and vinegar.
  • Mix in butter and vinegar just before serving.
