Sweet Potato/Camote Delight Recipe. This Pinoy dessert is so easy to prepare. Peel off the skin and mashed the cook camote or sweet potato then add condensed milk, butter and sugar then mixed it and refrigerate.

2 cups mashed Sweet Potato (Camote)
1/2 cup sugar
1 teaspoon vanilla extract
1/4 cup condensed milk
1/2 cup butter

Steps:

  • Boil the Sweet Potato until cook
  • Peel the skin then place on a separate bowl.
  • Mix the butter, sugar and condensed milk
  • Mash sweet potato “camote” with fork until smooth.
  • Add butter mixture in mashed Camote and mix well.
  • Spoon in paper cups, top with butter and chilled for 30 minutes then serve.

Mexican Sweet Potatoes | Camotes Enmielados | Mexican Made ... image

These are camotes enmielados or Mexican candied sweet potatoes. My recipe is a bit different than the traditional one but I promise this is going to become one of your favorite desserts. Drizzle with spiced syrup and soy milk for an amazing Mexican vegan dessert.

Number Of Ingredients 11

2 lbs sweet potato (each sweet potato cut into 4 or 8 pieces depending on size)
2 cups water (I used filtered)
1/2 cup granulated piloncillo (or brown sugar)
2 whole sticks canela or Ceylon cinnamon
1 whole star anise
3 whole cloves
3 whole all spice
3 whole cardamom pods, bruised
1/8 teaspoon ground nutmeg
1/4 teaspoon sea salt
1 cup unsweetened soy milk (or almond milk or oat milk or evaporated milk or media crema)

Steps:

  • Pour the water into the Instant Pot pot or any electric pressure cooker, then add the piloncillo, cinnamon sticks, spices and salt. Stir and select Saute function for 15 minutes. Allow to simmer until piloncillo has dissolved and the spices start releasing their scent.
  • Add the sweet potato pieces, place them skin side up. Place lid on IP and set valve to Sealing. Select manual mode and set to High Pressure for 10 minutes. Once timer goes off allow to sit for 10 more minutes. Then manually release remaining pressure. Wait for pressure valve to drop.
  • Carefully open the pressure cooker with steam facing away from your body. Remove the cooked sweet potato and set aside. Then with the slotted spoon scoop out all of the whole spices and discard them.
  • Set pressure cooker to Sauté and simmer until the liquid thickens up a bit and halves. Then carefully ladle it into a small serving pitcher with a small strainer over it to remove any last bits of spices.
  • To Serve the Camotes

  • Pour pineapple with juice into a non-reactive pan over medium high heat. Boil. Remove from heat and cold. Fold in food processor or possibly blender till pureed. Reserve in large mixing bowl. Next, blend sweet potatoes till smooth. Spoon sweet potato puree into non-stick pan over medium-high heat. Cook, stirring, till mix begins to boil. Add in sugar and flour. Boil, continuing to stir, for approximately 1 minute. Transfer to bowl containing pineapple puree. Stir. Pour mix into a buttered 9-by-13 inch pan. Cover with plastic wrap, chill till chilled and hardened, about 8 hrs or possibly overnight. Roll by tablespoonful into small balls or possibly cylinders. Roll in nuts. Wrap in wax paper, twisting ends and refrigeratetill ready to serve.
