This Filipino dish of pig's ears in a spicy, sweet and sour sauce is a perfect appetizer when people are drinking beer. [Originally submitted to Allrecipes.asia]

Yield 2 pounds of pig's ears

Number Of Ingredients 9

2?¼ pounds pig's ears, cut into thin slices
¾ cup water
? cup white vinegar
2 tablespoons white sugar
1 teaspoon salt
¼ teaspoon ground black pepper
1 green bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1 large green chile pepper, seeded and sliced

Steps:

  • Bring a large pot of water to a boil; boil pig's ears until no longer pink, about 10 minutes. Drain. Let cool, at least 15 minutes.
  • Combine 3/4 cup water, vinegar, sugar, salt, and pepper in a large bowl. Add the pig's ears and mix together. Cover with plastic wrap and keep refrigerated. Serve with green bell pepper, red bell pepper, and green chile.

I know this will be literally “hard to swallow” for many! LOL! But staying true to the site theme (Traditional Dominican food) Believe me when I say that even though I myself have a bit of a hard time eating it, the taste is great! This is one of the most popular and favored street foods. In the street it is generally fried instead of baked.

Pig snouts and ears
Sour orange juice
Oregano
Black pepper
1 bouillon cube
Lots of garlic
Salt.

Steps:

  • Clean well and cut the snouts and ears in small pieces. Put in pressure cooker until very soft. I like to add garlic to the water in which you soften the snouts and ears in the pressure cooker, as it helps with the flavor. Pig snout and ears Once soft, season well, putting special emphasis in the garlic (spread seasoning and salt all over) Put in the oven until it gilds and turns a bit crunchy. We generally serve with fried plantains.
