Beet-and-Burrata Crostini Recipe - Paul Virant | Food & Wine image

Beets are often thought of as a cold-weather vegetable, but Paul Virant loves the sweet varieties, such as Chioggia, available from the late spring through the fall. For this crostini, he stacks roasted beets on top of buttery burrata (cream-filled mozzarella) that he buys from California's Caseificio Gioia, which makes a variety of traditional fresh Italian cheeses. More Bruschetta and Crostini

Number Of Ingredients 6

1 pound medium beets, preferably Chioggia
1 baguette, cut crosswise into forty 1/4-inch-thick slices
1 tablespoon extra-virgin olive oil, plus more for brushing
Salt and freshly ground pepper
9 ounces burrata, cut into 40 pieces
Snipped chives, for garnish

Steps:

  • Preheat the oven to 350°. Place the beets in a small roasting pan and add 1/4 inch of water. Cover the pan with foil and bake for about 1 hour, until the beets are tender. Let cool completely.
  • Increase the oven temperature to 400°. Arrange the baguette slices on 2 large cookie sheets and brush with extra-virgin olive oil. Bake for about 10 minutes, until the bread is crisp.
  • Peel the beets and halve them lengthwise, then cut cut them crosswise into 1/8-inch slices. Transfer the beets to a bowl. Add the 1 tablespoon of olive oil, season with salt and pepper and toss to coat.
  • Top each crostini with a piece of burrata and a beet slice. Garnish with the snipped chives and serve immediately.

This is one of my favorite quick and easy appetizers! It looks fancy but it's simple to make and ohhhh so creamy. The honey & lemon drizzle gives the crostini the perfect tang and sweet pop!

Number Of Ingredients 8

1 baguette, sliced on a diagonal
Olive oil, for drizzling over the baguette
1/2 of a lemon, juiced
1-2 Tbsp honey (to taste)
8 oz burrata, sliced as best you can (it falls apart and oozes!)
4 slices prosciutto
3-4 basil leaves, torn into small pieces
Salt & pepper (to taste)

Steps:

  • Preheat broiler to high and arrange oven rack to one of the top highest positions (rack should be 3-4 inches from the broiler). Lay the baguette slices on a cookie sheet, drizzle with olive oil and sprinkle with a touch of salt. Broil for 2-3 minutes or until golden brown. Be careful, this goes super fast and it's really easy to burn the bread. I've done it too many times!
  • Meanwhile, add lemon juice and honey to a small bowl and whisk until combined. Salt & pepper to taste and set aside
  • Once the baguette slices are brown and toasted, remove them from the cookie sheet and place on a plate or platter. Lay out the slices of prosciutto on the same cookie sheet. Broil prosciutto for 3-4 minutes or until crispy. Once removed from the oven, cut or tear prosciutto into large pieces
  • To assemble, arrange crostini onto a plate or platter. Place one slice of burrata onto each crostini. The burrata will ooze and fall apart a little after you slice into it so just place some on each piece of bread the best you can. It looks rustic that way! :)
  • Top burrata with 1-2 pieces of the crispy prosciutto and sprinkle with the torn pieces of basil. Drizzle crostini with the honey/lemon sauce and enjoy!

The great thing is, that there are tons of things that taste great on top of good toasted bread!  For this recipe we top the crostini with some Burrata cheese, which is a type of mozzerlla that is more creamy and very mild tasting.  Many grocery stores have it, but if you can’t find it, you can use a good mozzarella.  Burrata crostini’s are super simple to make, and look very fancy and elegant, so they are sure to impress, without cause you a lot of stress!  Give them a try, and hope you enjoy it!
