La salsa conocida como “bruschetta” es un acompañamiento excelente para las pizzas, pastas o bien para comer como un entremés antes de la comida. Esta receta fue creada en el siglo XV en Italia, específicamente en la región de la Toscana. Originalmente esta salsa no contenía tomates; se preparaba solo con aceite de oliva y ajo utilizando pan del día anterior. Era un aperitivo común en la mesa de las familias humildes pero cuando esta receta fue adoptada por las clases sociales altas, éstas dieron un nuevo significado a la “bruschetta” agregando el tomate picado y dando mucha importancia al uso del aceite de oliva de gran calidad. En mi opinión, esta salsa es deliciosa y puede ser base para muchos platillos, por eso hoy quiero compartir esta receta contigo. ¡A cocinar!

2 tazas de tomate rojo fresco cortado en cubitos (de preferencia tomates roma)
4 dientes de ajo picados finamente
1 diente de ajo para frotar el pan
1/2 taza de aceite de oliva
1/2 taza de albahaca fresca cortada en juliana
1 cucharada de vinagre balsámico
1/2 cucharadita de pimienta negra molida
Sal al gusto
Pan baguette o ciabatta cortado en rebanadas y tostado

Steps:

  • Coloca todos los ingredientes, menos el pan, en un tazón y combina. Sirve en una salsera, cubre con plástico y refrigera hasta que estés lista para servir.
  • Para preparar el pan frota cada rebanada con un diente de ajo y agrega un poco de aceite de oliva, coloca en el horno y dora por unos minutos.
  • Para servir, coloca el pan en una bandeja y el tazón con la salsa. Sirve un poco de salsa en el pan y disfruta con una copita de vino blanco o tinto.

  • "MMMMM------------------------TOMATO SALSA----------------------------- 2 Ripe large plum tomatoes 2 ts Red onion; chopped 1/2 sm Green pepper; finely chopped 1/2 ts Ground cumin 1/2 ts Ground coriander 2 tb Fresh coriander; chopped 1 Cubes semi-soft goats cheese -to ; sprinkle on top Cut some of the bread into diagonal fingers. Preheat a ridged grill pan and when hot, toast the bread both sides. Brush with olive oil and then rub with a garlic clove. Skin the tomatoes, and chop finely. Mix with the red onion, green pepper and spices. Season well. To serve spoon the salsa on top, then add little cubes of goats cheese chevre.
