A quick and impressive dinner, scallops turn succulent and tender in the air fryer. The lemon-herb sauce is the perfect way to bring zest to each bite. Be sure to cook the scallops to temperature. They may not brown in the fryer, so don't wait for a golden crust to tell you they're ready.

8 large (1-oz.) sea scallops, cleaned and patted very dry
¼ teaspoon ground pepper
? teaspoon salt
Cooking spray
¼ cup extra-virgin olive oil
2 tablespoons very finely chopped flat-leaf parsley
2 teaspoons capers, very finely chopped
1 teaspoon finely grated lemon zest
½ teaspoon finely chopped garlic

Steps:

  • Sprinkle scallops with pepper and salt. Coat the basket of an air fryer with cooking spray. Place scallops in the basket and coat them with cooking spray. Place the basket in the fryer. Cook the scallops at 400 degrees F until they reach an internal temperature of 120 degrees F, about 6 minutes.
  • Combine oil, parsley, capers, lemon zest and garlic in a small bowl. Drizzle over the scallops.

1 large egg
1/3 cup mashed potato flakes
1/3 cup seasoned bread crumbs
1/8 teaspoon salt
1/8 teaspoon pepper
6 sea scallops (about 3/4 pound), patted dry
2 tablespoons all-purpose flour
Butter-flavored cooking spray

Steps:

  • Preheat air fryer to 400°. In a shallow bowl, lightly beat egg. In another bowl, toss together potato flakes, bread crumbs, salt and pepper. In a third bowl, toss scallops with flour to coat lightly. Dip in egg, then in potato mixture, patting to adhere. , Arrange scallops in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 3-4 minutes. Turn; spritz with cooking spray. Cook until breading is golden brown and scallops are firm and opaque, 3-4 minutes longer.
