This is a fantastic dish to serve for a Christmas Day breakfast or brunch.

Yield 6 to 8 servings

Number Of Ingredients 4

1 pound bacon, cut into small pieces
3 pounds peeled and shredded potatoes
1 pound shredded Cheddar cheese
12 eggs

Steps:

  • In a large skillet, fry bacon pieces on medium heat until brown and a little bit crispy. Set aside bacon.
  • Cook and stir shredded potatoes in bacon drippings on medium heat until tender.
  • In a large bowl, whisk eggs, and salt and pepper. Add eggs to potatoes. Reduce heat to low. Cover and simmer for 10 minutes. Sprinkle cheese and bacon pieces on top of potatoes. Let cheese melt. Serve.

Number Of Ingredients 8

1 pound ground beef
1 medium onion, chopped
3 cups diced peeled potatoes
1/2 cup water
Salt and pepper to taste
1 can (14-1/2 ounces) diced tomatoes, undrained
4 large eggs, lightly beaten
4 ounces Velveeta, sliced

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; crumble the beef; drain. Add the potatoes, water, salt and pepper. Cover and simmer for 20 minutes or until potatoes are tender. , Add tomatoes; cook for 5 minutes. Pour eggs over mixture. Cook and stir until eggs are completely set. Top with cheese. Cover and cook for 1 minute or until the cheese is melted.

  • 1. Prepare grill or campfire fitted with cooking rack. In a large, heavy skillet, cook bacon until crisp; remove and drain on paper towels.
