Restaurant-style breakfast sandwich at home! It's quick, easy and delicious! The sliced avocado is what makes this sandwich pop and gives it a unique flavor. It is chock-full of protein, as well, so this sandwich will keep you full until lunchtime.

Number Of Ingredients 8

1 tablespoon olive oil
2 large eggs
1 pinch salt and ground black pepper to taste
1 tablespoon butter, softened
2 slices Italian bread
1 ounce Swiss cheese, sliced
1 ounce Cheddar cheese, sliced
½ ripe avocado, sliced

Steps:

  • Heat olive oil in a skillet over medium heat. Crack eggs into skillet; cook for 1 to 2 minutes. Flip and cook egg until done, 2 to 5 minutes more. Transfer eggs to a plate and season with salt and pepper.
  • Spread butter onto 1 side of each bread slice.
  • Heat a skillet over medium heat. Lay bread slices in the hot skillet, butter-side down. Quickly layer Swiss cheese, 1 fried egg, Cheddar cheese, 1 fried egg, avocado, and remaining bread slice, butter-side up. Carefully flip sandwich to grill other side until golden brown, 3 to 4 minutes.
  • Remove sandwich from skillet and cut in half.

This bacon, egg, and avocado sandwich is a super easy camping breakfast that will fill you up before the day’s adventures! This recipe is written for one sandwich, but it can easily be scaled up to feed everyone at your campsite.

Number Of Ingredients 6

2 slices bacon (cut in half)
2 slices bread
1 egg
1 avocado
Salt + pepper
Optional: pinch of Everything But the Bagel seasoning

Steps:

  • Set a cast iron skillet over your campfire or camp stove. Place the bacon in the skillet and cook over medium-low heat, flipping occasionally, until crispy. Remove and place on a paper towel-lined plate.
  • Toast/fry the bread in the skillet, flipping after about a minute so that both sides are browned. Remove and set aside.
  • If needed, add a bit more fat to the skillet. Crack an egg into the skillet and cook to your liking.
  • To assemble the sandwich, slice the avocado in half, scoop out the middle, and mash it on both slices of bread. Layer the bacon on one side, the egg on the other, and season with salt & pepper.
