These make-ahead friendly puff pastry pockets are stuffed with creamy scrambled eggs, melted cheese, and bacon.

All-purpose flour
2 sheets puff pastry from 1 (17-ounce) box, thawed but still cold
1 1/2 cups scrambled eggs, cold or at room temperature
3 slices cooked bacon
1/2 cup shredded cheddar cheese

Steps:

  • Line a baking sheet with parchment paper. Lightly flour a work surface, place 2 thawed sheets puff pastry on it, and unfold the sheets. Cut each sheet into 6 rectangles for a total of 12. Place 6 of the rectangles in a single layer on the baking sheet.
  • Leaving a 1/2-inch border, divide 1/2 cup shredded cheddar cheese among the rectangles on the baking sheet (about 1 heaping tablespoon each). Divide 1 1/2 cups scrambled eggs over the cheese (1/4 cup each). Top each with 1/2 strip cooked bacon.
  • Brush water around the borders of each piece. Top with the remaining 6 puff pastry pieces. Crimp the edges with a fork to completely seal. Cut a 1/2-inch slit in the top of each. Refrigerate while the oven heats.
  • Arrange a rack in the middle of the oven and heat the oven to 400°F. Bake until puffed and golden-brown, 20 to 25 minutes.

1 bag (11.8 oz) frozen backyard grilled potatoes
2 eggs
1/2 to 1 teaspoon ground chipotle chili pepper
1 link fully cooked chicken sausage, chopped (1 cup)
1 cup shredded Mexican cheese blend (4 oz)
3 tablespoons chopped fresh cilantro
1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust

Steps:

  • Heat oven to 400°F. Microwave frozen potatoes as directed on bag. Cool 3 minutes. Coarsely chop and place in large bowl; set aside.
  • In medium bowl, beat eggs and chili pepper with wire whisk. Stir in sausage. In 10-inch nonstick skillet, cook egg mixture over medium heat 2 to 3 minutes, stirring occasionally, until eggs are set. Add cooked egg mixture, cheese and cilantro to potatoes; stir to combine.
  • Unroll dough. Press into 15x10-inch rectangle. Using sharp knife, cut into 6 rectangles. Spoon 1/2 cup egg mixture on one side of each rectangle. Fold dough over filling. Place on nonstick cookie sheet. Press edges with fork to seal. Bake 12 to 17 minutes or until golden brown.

  • NOTE: The great thing about this recipe is that you can change it up pretty much any way you want. If you don't have Bisquick you can use pretty much any country biscuit recipe. Change up the meat if you like: ham, sausage, bacon, cheddar sausage, whatever you like. Add more cheese if you like. Use Egg Substitute for a more healthy version. I have tried it several different ways and it lends itself to changes well.Also the crust is a thinner crust. If you would like a thicker crust then simply double the biscuit ingredients, follow the directions to mix it up and divide into 6 equal balls, but make the circles of dough between 1/4 inch and 1/2 thick. It will require extra baking time. Bake about 15 - 20 minutes of until golden brown on top.
