Turn your less than fresh bread into a cheap, tasty treat! You will not believe how tasty these are! Since I always have the ingredients I have played around with a few variations.

Total Time 22 minutes

Prep Time 10 minutes

Cook Time 12 minutes

Yield 24 cookies

Number Of Ingredients 11

1 1/4 cups flour
1 1/2 cups sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/3 cup cocoa
1/2 cup milk
1 large egg
2 teaspoons vanilla extract
2/3 cup vegetable oil
2 cups breadcrumbs
1/2 cup nuts (optional)

Steps:

  • Mix dry ingredients in large bowl.
  • Combine liquids and add to dry.
  • Drop by spoonfuls onto ungreased cookie sheet.
  • Bake at 350° for 10-12 minutes.
  • Remove from pan while still warm.
  • Cool on rack.
  • Variations: Mexican Chocolate Cookies: add 1 tsp cinnamon and almonds.
  • Cinnamon Sugar Cookies: omit cocoa add 1 tsp cinnamon.
  • Cappuccino Cookies; add 1 tsp cinnamon, and 2 Tbsp instant coffee.

Number Of Ingredients 9

3 large egg yolks
1 cup sugar
3 tablespoons cold water
3/4 cup chopped walnuts
1 cup soft breadcrumbs
2 teaspoons baking powder
1 tablespoon melted shortening
1 teaspoon vanilla
3 large egg whites, stiffly beaten

Steps:

  • Beat egg yolks until thick and lemon colored.
  • Add sugar and water.
  • Add the nuts, bread crumbs, baking powder, and shortening.
  • Mix well.
  • Add vanilla and fold in Stiffly beaten egg whites.
  • Bake in 2 greased layer cake pans in hot oven (400°F) 15- 20 minutes.
  • When cool, spread whipped cream, sweetened and flavored, between layers and on top of cake.
