Braised pork on rice recipe - Simple Chinese Food image

I made braised pork rice today. The meat is rotten and crunchy, and there is a thick gravy; the small rapeseed is green and light, which just supplements the vitamins and neutralizes the richness of the meat. The white rice is scooped into a large bowl, and the large bowl that is slurping in the slurs is poured into the belly. In fact, it is nothing more than changing the way of serving food, but it tastes incredibly fragrant.

Number Of Ingredients 10

500 g Pork belly
1 pot Rice
Several petals garlic
1 stage Green onions
a little Cooking wine
1 piece star anise
50 grams Braised Soy Sauce
a little salt
Right amount Vegetable oil
A few Small rape

Steps:

  • Wash pork belly with skin and cut into strips
  • Cut into thin strips the thickness of your thumb
  • Wash the small rapeseed
  • Pour a little oil in the wok
  • Pork belly in the pot
  • Stir-fry slowly over medium and low heat until the oil is slightly browned on the edges. Add garlic cloves, green onions, cooking wine, and star anise, and continue to stir-fry for a fragrance
  • Pour in the soy sauce, after the meat is colored, pour in hot water to cover the meat, then cover and simmer until cooked
  • When the skin is rotten and the meat is crispy, slightly accept the juice, add salt according to the taste, mix evenly, and take it out of the pan
  • Boil the small rapeseed in a pot of boiling water and remove it
  • Put the rice in a bowl, pour meat, soup, and small rapeseed

Braising the pork in soy sauce and chile paste infuses it with flavor and keeps it tender. Serve with sesame-soy cucumbers: Combine 1 tablespoon rice vinegar, 2 teaspoons lower-sodium soy sauce, 1 teaspoon dark sesame oil, and 2 sliced English cucumbers.

4 teaspoons dark sesame oil, divided
12 ounces pork shoulder, trimmed and cut into 1/2-inch pieces
2 tablespoons minced fresh garlic
1?¾ cups water, divided
2 tablespoons lower-sodium soy sauce
1?½ tablespoons rice vinegar
2 teaspoons sambal oelek (ground fresh chile paste)
1 cup finely chopped onion
? cup sliced carrot
1 cup long-grain white rice
1?¾ cups unsalted chicken stock (such as Swanson)
1 cup frozen green peas
¼ cup thinly sliced green onions

Steps:

  • Heat a large saucepan over medium-high heat. Add 2 teaspoons sesame oil to pan; swirl to coat. Add pork to pan; cook 5 minutes, turning to brown on all sides. Add garlic to pan; cook 1 minute, stirring constantly. Stir in 1 cup water and the next 3 ingredients (through sambal oelek); bring mixture to a boil. Reduce heat; simmer 45 minutes or until liquid evaporates, stirring occasionally. Remove pork from pan; keep warm.
  • Return pan to medium-high heat. Add remaining 2 teaspoons sesame oil to pan; swirl to coat. Add onion and carrot; sauté 3 minutes. Add rice; cook 1 minute, stirring frequently. Stir in pork, remaining 3/4 cup water, and chicken stock; bring to a boil. Cover, reduce heat, and cook 20 minutes or until the liquid is absorbed and rice is tender. Stir in peas; cook 1 minute or until thoroughly heated. Sprinkle with green onions.

  • Wipe meat with damp cloth; cut off fat edging the steaks. Brown meat slowly on both sides. (Use a cast iron skillet, if possible. No added fat is necessary.) To skillet, add in all the rest of the ingredients, except rice, and turn heat to low. Cover pan. Cook 30 min. Add in rice (regular, NOT instant nor converted rice!) and simmer, covered, 30 to 40 min longer, till meat and rice are very tender. I usually remove the meat and put the rice into the liquid, then put the meat on top. I served it with a tossed salad and - believe it or possibly not - succotash. Great combination of flavors.
