It’s the most wonderful time of the year! In fact, it’s tough trying to pick my favorite holiday: Thanksgiving?

Number Of Ingredients 16

FOR THE CRUST:
2 c. All-purpose Flour
1 tsp. Sugar
1 tsp. Salt
3/4 c. Cold Unsalted Butter Cut Into Pieces
4 tbsp. Ice Water
1 tbsp. Vanilla Bean Paste
FOR THE FILLING:
4 tbsp. Unsalted Butter, melted
2 Large Eggs
1 c. Light Corn Syrup
1 c. Loosely Packed Brown Sugar
1 tbsp. Bourbon
2 tsp. Vanilla Extract
1 c. Coarsely Chopped Pecans
1 c. Whole Pecans

Steps:

  • For the crust:Place flour, sugar and salt in the bowl of your food processor and pulse to blend. Add cold butter and blend until coarse crumbs remain; you want the butter in little pieces. Stream in ice water and vanilla bean paste, blending until dough starts to come together. Use your hands to remove the dough and form it into a ball. Press it down slightly into a disk and wrap in plastic wrap. Chill for 30 minutes.For the filling:While dough is chilling, whisk together butter, eggs, corn syrup, sugar, bourbon and vanilla extract until smooth. Stir in chopped pecans.Preheat oven to 350ºF. Line a baking sheet with parchment paper. Take the dough out of the fridge and roll it into a large circle, about 1/4-inch thick. Press the dough into the tart pan, removing excess edges. Pour pecan filling into the tart. Place whole pecans on top of filling. Place tart pan on the baking sheet. Bake for 45–55 minutes, or until filling is set.Remove the tart from the oven and let cool completely. You can definitely make this a day ahead of time. Slice into wedges when you’re ready to serve!Recipe for filling lightly adapted from Saveur.

1 cup sugar
3 tablespoons butter, melted
1/2 cup corn syrup
3 large eggs, beaten
1 1/2-2 cups pecan halves
2 tablespoons bourbon, good quality
1 pie shell, 9 inches, unbaked

Steps:

  • Preheat the oven to 375. In a mixing bowl, stir together the sugar and melted butter. Mix in the corn syrup, eggs, pecans, and bourbon... and stir until everything is combined. Pour mixture into an unbaked pie shell and place on a strong cookie sheet. Bake for about 10 minutes. Lower the oven temperature to 350 and continue to bake for an additional 25 minutes or so. Remove from oven and cool on a wire rack.

  • PIE CRUST Stir the flour and salt in a bowl. Add the butter and shortening. Work the butter into the flour using a dough cutter until the mixture resembles tiny pebbles. Add the egg with five tablespoons cold water and the vinegar. Stir the mixture until just combined. Divide the dough in half and chill until needed. Once chilled, sprinkle the cutting board or counter liberally with flour. Roll half of the dough into a large circle and place in a standard pie pan. Crimp the edges according to desired look. Reserve the other half of dough for another use. Preheat the oven to 350. FILLING Mix the white sugar, brown sugar, salt, corn syrup, butter, vanilla and eggs together in a bowl. Pour the pecans in the bottom of the unbaked pie shell. Pour syrup mixture over the top. Cover top and crust lightly/gently with foil. Bake the pie for 30 minutes. Remove the foil, and then continue baking for 20 minutes, being careful not to burn the crust or pecans. The pie should not be too jiggly when you remove it from the oven. If it shakes a lot, cover with foil and bake until set, an additional 20 minutes. Required baking time seems to vary widely with this recipe. Sometimes it takes under an hour to cook, other times closer to 75. Allow to cool for several hours or even overnight. Serve in thin slivers.
