2 packages (11.7 oz) frozen Pillsbury™ Blueberry Toaster Strudel™ (6 Count)*
2 packages (8 oz each) cream cheese, softened
1/3 cup granulated sugar
2 teaspoons vanilla
2 eggs
Grated peel and juice of 1 small lemon
2 cups fresh blueberries
Powdered sugar, for sprinkling

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • Toast pastries as directed on box, reserving icing packets for later. Place pastries flat in baking dish.
  • In large bowl, beat cream cheese and granulated sugar until smooth. Add vanilla, eggs, lemon peel and lemon juice. Beat until smooth and creamy. Pour mixture over toaster pastries, smoothing with rubber spatula. Sprinkle with fresh blueberries.
  • Bake 25 to 30 minutes or until center is just beginning to set. Cool 10 minutes; cover and refrigerate 2 hours.
  • When ready to serve, drizzle reserved icing over bars; sprinkle with powdered sugar. Cut into 6 rows by 3 rows.

Then I got to Dollar General and buy a whole bunch of Toaster Strudel because they’re delicious and I have a coupon for 25 cents off. I can’t resist a bargain, nor can I resist warm, flaky layers of palm-oil-soaked pastry filled with artificial blueberry jam.  Recently I’ve started making my own toaster strudels, not because they are better for me (they're not really), but they're just plain better. I like a toaster strudel with layers and layers of crispy, buttery, paper thin dough. I also enjoy folding things, and this requires a lot of folding.  A recipe with weights and measurements is not really necessary for toaster strudels, in the same way that you don’t take out the measuring cups when you’re filling a burrito. In a separate bowl, combine blueberries, 2 tablespoons sugar, cornstarch, and lemon juice. Stir to combine. Prepare dough: Unroll the refrigerated crescent roll dough. If there are perforated edges, pinch the lines together to get rid of the cutouts. Lightly flour the dough, then roll it out slightly with a rolling pin to create a large rectangle. Assemble the braid: Spread the cream cheese mixture in the center of the dough, leaving about a 3” border on each side. Spread the blueberries over the cream cheese mixture. With a sharp paring knife (or kitchen shears), cut diagonal 1" strips along both sides of the dough border. Starting at the top of the dough, fold the strips over the blueberries, alternating sides to fold the left and right strips over one another. Brush the top of the pastry with egg wash, then sprinkle with sugar and almonds. Bake for 15 minutes, then let cool slightly.
