1 tablespoon peanut oil
2 garlic cloves, crushed
1 tablespoon fresh gingerroot, grated
6 spring onions or 6 green onions, cut into 3cms lengths
1 kg rice noodles, fresh - 2 cms thickness
2 tablespoons black bean sauce, bottled
2 tablespoons chinese rice wine (shao hsing)
1 tablespoon rice wine vinegar
1 tablespoon soy sauce
2 tablespoons sugar
1/2 teaspoon sesame oil
1 tablespoon chives, 5cm lengths

Steps:

  • Heat wok, add oil and stir-fry the garlic, ginger and spring onion for 2 minutes or until fragrant.
  • Add the noodles and stir-fry until soft.
  • Add the black bean sauce, chinese rice wine, rice wine vinegar, soy sauce, sugar and seasame oil and stir-fry until the sauce boils and thickens slightly.
  • Serve immediately and garnish with chives.

250g pack Chinese egg noodles
1 tbsp olive oil
2 tbsp sesame oil
4 skinless chicken breasts , sliced
bunch spring onions , sliced
4 garlic cloves , chopped
205g jar black bean sauce
300g pack beansprouts
soy sauce , to serve

Steps:

  • Cook noodles according to pack instructions. Heat the olive oil and 1 tbsp sesame oil in a large wok, then stir fry the chicken until it just changes colour.
  • Add spring onions and garlic, cook briefly, then add black bean sauce and toss well. Drain noodles, add to the wok with the bean sprouts and remaining sesame oil. Toss until piping hot. Serve with soy sauce.

  • To Prep Prepare the pork by cutting them into 2-3cm cubes. Marinate the pork with a tablespoon of rice wine (or mirin), ginger, salt and pepper. Set aside. Cut the onion, cabbage and zucchini to 2-3cm cubes. Set aside. To Cook In a small saucepan, heat up 2 tbsp of oil then add the black bean paste, sugar, and oyster sauce. Fry it over medium heat for 2-3 mins, stirring constantly. Heat a large pan over medium high heat with the remaining1 tbsp of oil. Add the pork and stir fry until cooked. Add the vegetables and cook until soft, stirring occasionally. Stir in the black bean paste and mix everything thoroughly together until all the meat and vegetables are coated well with the paste. Pour in the stock and bring it to a boil for 3-4 mins. Place the potato or corn starch into a small bowl, dissolved in ¼ cup of water. Stir in to the pot of sauce and cook briefly until the sauce is thickened. In a separate pot, heat water and add the noodles in the boiling water. Cook according to the package instructions and drain, the noodles should have a firm bite to them. Place a serving size of noodles in each bowl. Spoon the sauce over the noodles and garnish with the thinly julienned cucumber and carrot.
