Number Of Ingredients 8

Zucchero macinato 130 grammi
Burro 130 grammi
Lievito per dolci 3 grammi
Uovo da 70 grammi 1
Vanillina 1 bustina
Aroma Limone (o scorza grattugiata) 1 fiala
Sale 1 pizzico
Farina per pane e paste lievitate 300 grammi

Steps:

  • Portate tutti gli ingredienti a temperatura ambiente. In una terrina setacciate la Farina per Pane e Paste Lievitate BiAglut, unite lo zucchero, il lievito, la vanillina e il sale e miscelate tra loro tutti gli ingredienti. Unite il burro morbido e con le dita integratelo alla farina. Aggiungete l'aroma di limone (o la scorza di limone grattugiata) e l'uovo intero. Versate il composto sul piano di lavoro e lavorate la pasta fino a ottenere un impasto omogeneo (si deve avere cura di non prolungare troppo il tempo di lavorazione per non far trasudare il burro). Lasciate riposare la pasta per un'ora in frigorifero avvolta in una pellicola per alimenti. Trascorso questo tempo lavorate di nuovo la pasta per pochi minuti. Dividete la pasta in tre parti: 320 grammi per la base della torta, 120 grammi per il bordo perimetrale, la rimanenza per guarnire. Stendete la pasta base in una teglia da torta avendo cura di foderare anche i bordi. Cospargete la base di confettura del gusto desiderato e completate con le guarnizioni utilizzando la pasta rimasta. Infornate a 180°C per 25 minuti.

Uova da 70 grammi ciascuna 2
Acqua 30 grammi
Farina per pane e paste lievitate 250 grammi

Steps:

  • Portate tutti gli ingredienti a temperatura ambiente. Disponete la Farina senza glutine BiAglut sul piano di lavoro o in un recipiente praticando la "fontana". Rompete le uova sulla fontana e ricopritele di farina per integrarle completamente. Gradatamente aggiungete l'acqua e iniziate ad impastare fino a ottenere una pasta liscia e omogenea. Formate un rotolo e lasciatelo riposare per 30 minuti circa in un sacchetto di plastica per alimenti. Tagliate il rotolo in 3 o 4 pezzi di uguale misura, ma lavoratene un pezzo alla volta riponendo gli altri nel sacchetto di plastica per evitare che la pasta si asciughi in superficie rendendo più difficile la lavorazione. Tenendo ben infarinati sia il piano di lavoro che gli attrezzi, tirate la pasta fino allo spessore desiderato e tagliatela nel formato desiderato. Per un gusto più deciso potete eliminare l'acqua sostituendola con un altro uovo.
  • A mano: Passate l'impasto 3 – 4 volte con un mattarello, ripiegatelo su se stesso per 3 volte, ruotatelo di 90 gradi e tiratelo nuovamente. Stendete l'impasto con il mattarello, spolveratelo con la Farina senza glutine BiAglut e ripiegatelo a formare un rotolo. Tagliate con un coltello per ottenere il formato di pasta desiderato (fettuccine: listarelle di 5 millimetri; tagliatelle: listarelle di 1 centimetro; lasagne: quadri da 8 – 10 centimetri).
    A macchina: Passate l'impasto 3 – 4 volte con il mattarello, girandolo dopo ciascuna passata come descritto sopra. Stendete l'impasto senza glutine facendolo passare 4 – 5 volte nella macchina in posizione 3. Fate un ultimo passaggio in posizione 5 o 6 e tagliate la pasta nel formato desiderato.
  • La cottura deve avvenire in abbondante acqua salata, rispettando la seguente proporzione: 1 litro di acqua, 10 grammi di sale, un cucchiaino d'olio extra vergine d'oliva per ogni 100 grammi di pasta. Tempo di cottura: 3 – 5 minuti se la pasta senza glutine è appena preparata, 5 – 7 minuti se la pasta è stata lasciata essiccare per 30 minuti circa (il tempo di cottura varia a seconda del formato scelto).
