BEST EVER BANANA MUFFINS RECIPE - FOOD.COM
These are the only banana muffins I make now. I add chocolate chips to my batter and triple the recipe. These freeze great. I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". (Prep time is a guess.)

Steps:
- Mash bananas.
- Add sugar and slightly beaten egg.
- Add melted butter.
- Add the dry ingredients and bake at 375 degrees for 20 minutes.

Steps:
- Preheat oven to 350°F.
- Line muffin pan with muffins liners and set aside.
- In a large bowl combine both sugars, baking soda, spices, and salt.
- Add the applesauce and mix well (mixture should be completely smooth).
- Beat in the oil, eggs, and vanilla extract.
- Add the flour and mix until incorporated. Do not over mix!
- Scoop the batter into the muffin pan filling the cups to the top.
- Bake for 20 – 21 minutes until a toothpick inserted comes out with a few crumbs.
- Cool in pan 5 minutes then transfer to a wire rack (or large plate if you don't have a rack) to continue cooling.
- Serve warm or cooled completely.

I have been making this for years. I still have the original recipe I clipped from Bon Appetit magazine 25+ years ago. There are a few slight differences from the original recipe which calls for 2 bananas, 1/4 cup plus one tablespoon buttermilk, 1 cup chopped walnuts and 1 teaspoon vanilla. This is indeed the best banana bread recipe ever.
