This recipe was really yummy to start with but I was looking for something a little healthier so I replaced some butter with non-fat yogurt and I eliminated the salt. It is super moist and tastes great.

2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
¼ cup butter
⅛ cup nonfat plain yogurt
¾ cup brown sugar
2 eggs, beaten
2 ⅓ cups mashed overripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Combine flour, baking soda, and salt in a large bowl. Beat butter, yogurt, and brown sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add room-temperature eggs one at a time, allowing each egg to blend into butter mixture before adding the next. Stir in mashed bananas until well blended. Pour banana mixture to flour mixture; stir just to moisten. Transfer batter into prepared loaf pan.
  • Bake in preheated oven until a toothpick inserted into center of loaf comes out clean, 60 to 65 minutes. Let bread cool in pan for 10 minutes, then turn out onto wire rack to cool completely.

⅓ cup unsweetened applesauce
¼ cup honey
2 tablespoons light brown sugar
2 large eggs
3 large ripe bananas, mashed (about 1½ cups)
¼ cup unsweetened almond milk
1 teaspoon baking soda
1 teaspoon pure vanilla extract
½ teaspoon ground cinnamon
1 ½ cups white whole-wheat flour

Steps:

  • Heat oven to 350°F. Grease an 8-by-4 inch loaf pan.
  • In a large bowl, combine the applesauce, honey, and brown sugar. Add the eggs and beat well. Stir in the mashed bananas and almond milk. Add the baking soda, vanilla extract, cinnamon, and ½ teaspoon salt and stir.
  • Gradually fold the flour into the banana mixture until just combined (do not overmix).
  • Pour the batter into the prepared pan and bake until a toothpick inserted into the center of the loaf comes out clean, 45-50 minutes. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
