A healthier and simpler alternative to homemade French fries or chips, and the perfect side when there's a chicken or roast already in the oven.

1 1/4 pounds red-skinned potatoes
2 tablespoons olive oil
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Place a rimmed baking sheet in the center rack of the oven and preheat the oven to 425 degrees F.
  • Thinly slice the potatoes about 1/8-inch thick and toss with the oil, salt and pepper. Carefully spread the slices on the hot baking sheet in a single layer and roast until golden and crispy, turning with a metal spatula occasionally and spreading them out to cook evenly, 30 to 35 minutes.

Number Of Ingredients 7

1 ½ pound Yukon Gold or Russet potatoes of your choice (about 3 medium-sized)
1 large white onion, sliced
½ teaspoon garlic salt
½ teaspoon paprika
1 teaspoon dried parsley
1 tablespoon vegetable oil
Salt and pepper to taste

Steps:

  • Wash and dry your potatoes and slice them thinly. Then peel and slice the white onion into thin slices
  • Mix sliced potatoes and sliced onion and sprinkle them with garlic salt, paprika, salt, and pepper
  • Melt the butter with the oil in a non-stick or cast-iron skillet. Layer the potatoes and onions on the skillet
  • Place a plate or another skillet on top of the potatoes and add weight to them. You may use cans or a pot filled with water.
  • Cook over medium-high heat for 2-3 minutes to make a crust and then turn them, apply the weight and let them crust on the other side. Turn the potatoes every 3 minutes for 20 minutes until they are all cooked through and golden brown

    2. Peel and thinly slice the potatoes, and peel, halve and finely slice the onions. Pick the sage leaves and finely slice most of them, leaving some whole.
    3. Arrange a layer of sliced potatoes over the base of a 20cm x 30cm baking dish, followed by a layer of sliced onions, a scattering of sliced sage and a pinch of sea salt and black pepper. Keep alternating layers of potatoes and onions, lightly seasoning each layer and finishing with a layer of potatoes that slightly overlap each other.
    4. Pour over the stock, season the top layer with a little salt and pepper, then scatter over the whole sage leaves and grate over the Parmesan.
