EASY SALMON PIE | SAINSBURY'S RECIPES
There's no peeling or mashing required for this 20-minute salmon and potato dish.

Preheat the oven to 200ºC, 180ºC fan, gas mark 6. Line a baking tray with baking parchment and arrange the salmon fillets on top - If you're using the frozen salmon, defrost and pat dry with kitchen paper before adding the potato
Mix the soft cheese and the chopped chives together in a small bowl, then spread the mixture over the top of the salmon fillets.
In a separate bowl, loosen the mashed potato with a fork, then spoon onto the salmon fillets. Brush with the melted butter.
Bake for 12-15 minutes until the salmon is cooked through and the potato is crispy on top.
Meanwhile, cook the peas in a pan of boiling water for 3-4 minutes. Drain and serve with the salmon and rocket.

EASY SALMON EN CROûTE | JAMIE OLIVER RECIPES

- Preheat the oven to 220°C/425°F/gas 7. Peel and chop the onion and place in a large non-stick pan on a medium heat with 1 tablespoon of olive oil. Peel, finely slice and add the garlic. Finely grate in the lemon zest, then cook for 10 minutes, or until softened, stirring regularly. Stir in the spinach, cover, and cook for 5 minutes, then remove the lid and cook for another 5 minutes, or until all the liquid has cooked away. Season to perfection. Unroll the pastry and place it, still on its paper, in a baking tray. Spread over the spinach, leaving a 5cm border all the way around. Sit the salmon fillets on top, 1cm apart, then use the paper to help you fold in the pastry edges to snugly encase the salmon, leaving it exposed on the top. Beat the eggs and use some to brush the exposed pastry, then bake at the bottom of the oven for 15 minutes. Meanwhile, beat the pesto into the remaining egg. When the time’s up, pull out the tray and pour the egg mixture over the salmon and into the gaps. Return to the bottom of the oven for a final 15 minutes, or until the pastry is golden and the egg is just cooked through. Serve with lemon wedges, for squeezing over.

Preheat the oven to 180 degrees
Cook the salmon en papillote, with some olive oil, clove garlic, squeeze of lemon and season with salt and pepper to taste, for 15 minutes
Boil the pasta for 15 mins until al dente
Cook the leeks in the butter and garlic, once softened season and add the flour to coat all the leeks
Add the milk a little at a time until you have a thick creamy sauce, now add the yogurt and mustard along with the parsley and mint and stir well – season well with black pepper
Add your cooked pasta to an oven proof dish, then add the salmon layer, flaking across all the pasta removing any bones.
Now add the creamy leeks over the top covering right to the edges
Sprinkle over the breadcrumbs and season lightly again
Put this in the oven until golden brown on top – about 15 minutes should do the trick!
