Prep Time 10 minutes

Cook Time 1 hours 10 minutes

Yield 8

Number Of Ingredients 18

1 pound(s) (550 g) mild italian sausage, casings removed
1 cup(s) red onions, chopped
1 cup(s) celery, chopped
1 cup(s) olive oil, if needed
2 1/2 cup(s) button mushrooms, washed and sliced
ground himalayan sea salt, to taste
freshly ground black pepper (i always use mixed peppercorns), to taste and divided
3 large cloves garlic, pressed
1 teaspoon(s) dried basil leaves
1 teaspoon(s) dried rosemary, chopped
1 teaspoon(s) dried oregano
1 teaspoon(s) dried thyme leaves
1/4 teaspoon(s) red pepper flakes, or to taste
3/4 cup(s) dried cranberries
6 cup(s) a day old bread such as challah, brioche, or sourdough
2 large free-run eggs, room temperature
2 1/4 cup(s) low-sodium chicken broth
1/4 cup(s) fresh parsley, chopped

Steps:

  • Preheat oven to 375ºF and grease a 9x13 baking dish; set aside.
  • In a large skillet over medium heat, add sausage and cook until browned, breaking the meat into small pieces, about 6 minutes.
  • Using a slotted spoon, transfer to a large bowl and set aside.
  • In the same skillet, add onions and celery; sauté until they start to soften, about 3 minutes – if there’s not enough fat from the sausage, add some olive oil.
  • Add mushrooms and sprinkle with ground sea salt and freshly ground black pepper; cook for 4 minutes. Add garlic and sauté for 1 minute.
  • Transfer mixture to the sausage and season with basil, rosemary, oregano, and thyme. Add red chili flakes only if using mild sausage; stir well. Add cranberries and bread pieces; stir to combine.
  • In a mixing bowl, combine eggs, chicken broth, parsley, salt and pepper; whisk well. Add egg mixture to bread mixture and stir until well blended.
  • Transfer stuffing mixture to the prepared baking dish, level it out, cover with foil and bake in the preheated oven for 25 minutes.
  • Remove from the heat and allow to rest for 10 minutes before serving. Makes 8 to 10 servings

ITALIAN FENNEL SAUSAGE RECIPE - NYT COOKING
Make this simple fennel-scented sausage to toss into pasta or onto pizza. Par-cook large crumbles to fold into Thanksgiving stuffing or a pot of soup. Or fry up patties and serve alongside crusty bread and a bowl of tender white beans doused generously in olive oil. Be sure to use ground pork with enough fat or you'll end up with dry, flavorless sausage. Twenty percent by weight is a good ratio, though 25 doesn’t hurt. If the ground pork available to you is too lean, ask the butcher to replace two ounces or so of the lean meat with ground pork belly or bacon.

  • Toast fennel seed in medium sized, heavy saute pan over medium heat, constantly moving seeds around in pan until they start to turn light brown, about 5 minutes. Set aside to cool. Once cool, grind seeds and combine with salt, pepper, and chopped parsley in medium mixing bowl. Add pork and blend thoroughly. Refrigerate for 1 hour. Using the fine blade of a grinder, grind the pork. After lubricating stuffer or stuffing attachment with shortening, load casing onto attachment, clipping end with a clothespin. Stuff meat into casings, trying to avoid air pockets. After stuffing is finished lay out on counter and tie off end. Pinch and twist to form 4-inch sausages. Wrap in parchment paper and refrigerate for 2 to 3 hours. Store in refrigerator for use within 2 to 3 days or freeze for up to 3 months. If freezing, wrap in aluminum foil. If using immediately, saute over medium heat in a heavy saute pan with 1/4-inch of water. Bring water to boil, put on lid and cook for 10 minutes. Remove lid and continue cooking over medium heat, turning every 2 to 3 minutes until golden brown. Sausage should reach an internal temperature of 150 to 156 degrees F.

SUPER EASY: BAKING SAUSAGE RECIPE - FOOD.COM
My daughter taught me to cook bacon with no splatter or mess on the stove top, by baking it instead. So I decided to try baking breakfast link sausage the same way. I use a 10"x15" jelly roll pan or the bottom of a broiling pan. I buy parchment paper for baking in rolls in bulk online. I bake 3 pounds of maple breakfast link sausage at a time and freeze it in individual servings.
