Gina's Italian Butter Cookies Recipe | Allrecipes image

Traditional Italian-American bakery-style butter cookies that will make you feel like you bought them from your favorite local bakery in New York! Fill them with raspberry or apricot preserves, or chocolate, or dip one side in chocolate and cover with sprinkles--or do both! 2?¼ cups cake flour
1?½ cups all-purpose flour
1?¼ teaspoons baking powder
1 teaspoon salt
1 cup unsalted butter, softened
1 cup white sugar
½ cup vegetable shortening
4 ounces almond paste
2 large eggs
2 teaspoons vanilla extract
1 teaspoon lemon juice
¼ teaspoon almond extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine cake flour, all-purpose flour, baking powder, and salt in a medium bowl.
  • Combine butter, sugar, and shortening in a large bowl; cream with an electric mixer on medium speed until light and fluffy. Mix in almond paste until thoroughly combined. Add eggs, vanilla extract, lemon juice, and almond extract. Reduce the mixing speed to low and slowly add dry ingredients. Scrape down the bowl once all dry ingredients are added, then mix on medium speed until evenly combined, about 30 seconds.
  • Fit a large pastry bag with an 864 or 4S tip and fill bag with batter. Pipe evenly sized cookies onto an ungreased cookie sheet 1 1/2 to 2 inches apart, giving cookies space to puff slightly during baking.
  • Bake in the preheated oven, in batches if necessary, until bottom edges are slightly browned, 8 to 10 minutes. Cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.

One of my grandma's favorite cookie recipes. These are very traditional Italian cookies with sprinkles flavored with anise extract. If you don't know what anise is, the flavor is very similar to black licorice.

1 cup unsalted butter, softened
1 cup white sugar
1 teaspoon anise extract
1 teaspoon lemon extract
3 large eggs
3 cups all-purpose flour
3 teaspoons baking powder
¼ teaspoon salt
1 cup powdered sugar
2 tablespoons milk
2 tablespoons multicolored candy sprinkles, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat butter and sugar together until creamy. Stir in anise extract and lemon extract. Blend in eggs. Combine flour, baking powder, and salt in another bowl; blend into egg mixture until dough is almost crumbly but stays together when you roll it in your hands.
  • Form dough into 1-inch balls and place 2 inches apart on ungreased cookie sheets.
  • Bake in the preheated oven until edges are set and golden, about 15 minutes. Remove from the oven. Cool on the baking sheet briefly before removing to a wire rack to cool completely, about 15 minutes.
  • Meanwhile, combine powdered sugar and milk in a bowl. Glaze cooled cookies and top with sprinkles.

I don't have exact prep times..it will also make (depending on size) about 50 cookies that are not sandwiched with the jelly, and about 25 if they are sandwich style. They are melt in your mouth either way! I've refrigerated the dough at least 15 min sometimes to use in a cookie gun to make shaped butter cookies as well. You can also color the dough depending on occasion..or use madelaine cookie pans
