8 small, red Mullets
salt (to taste)
freshly ground Black pepper (to taste)
4 cloves garlic cloves (minced)
0.5 cup fresh parsley (chopped)
0.25 cup olive oil
Parchment paper sheet (for baking)

Steps:

  • Preheat oven to 450º F.
  • Season fish with salt and pepper, inside and out. Arrange two fish in the center of a piece of parchment paper. Mash garlic and parsley together and spread over the top of each fish. Drizzle with olive oil. Fold up each packet of parchment and seal the edges. Repeat until all the fish are wrapped.
  • Bake in the oven for 15 to 20 minutes, or until fish is done. Carefully release steam from packet. Serve hot.

2 pounds skinless mullet fillets
2 teaspoons lemon juice
Dash of pepper
6 slices bacon
1 large onion, thinly sliced
½ cup soft breadcrumbs
2 tablespoons chopped fresh parsley

Steps:

  • Place fish in a single layer in a greased 12- x 8- x 2-inch baking dish. Sprinkle lemon juice and pepper over fish. Set aside.
  • Cook bacon until crisp; drain well on paper towels, and reserve drippings in skillet. Crumble bacon, and set aside. Sauté onion in bacon drippings over low heat until tender. Place sautéed onion on fish.
  • Combine reserved bacon, breadcrumbs, and parsley; sprinkle over fish. Bake, uncovered, at 350° for 25 minutes or until fish flakes easily when tested with a fork. Serve immediately.
