Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
- Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

A super easy, single pan, all-in-one dinner. The potatoes go in the oven first, while you mix and season the chicken pieces, zucchini, cherry tomatoes and onions. Then add them to the pan, and continue cooking until the chicken is done and the potatoes are crisp on top and golden.

- Pre-heat oven - 230°C
- Add baby potato, olive oil and sea salt to a clean large mixing bowl and mix
- Transfer vegetables to baking sheet
- Roast until softened - 15 min, 230°C
- Add chicken pieces, zucchini, onion, cherry tomatoes, olive oil, fresh thyme, lemon zest and sea salt to a clean large mixing bowl and mix
- Transfer chicken to baking sheet
- Roast until golden brown - 20 min, 230°C
- Serve

- Scrub and pierce potatoes. Bake at 400° for 50-75 minutes or until tender. Cool until easy to handle. Reduce heat to 350°. In a large skillet, saute zucchini and onion in 1 tablespoon butter until tender. Drain and set aside., Scoop out the potato pulp, leaving a thin shell; place pulp in a bowl and mash. Add the sour cream, salt, pepper and remaining butter; mash. Stir in zucchini mixture. Spoon into potato shells. Sprinkle with cheese. , Place on a baking sheet. Bake at 20-25 minutes or until heated through and cheese is melted.
