This is a very easy and delicious dish that I like to make as a side dish for my summer barbecues.

2 medium zucchini, quartered and cut into large pieces
4 medium potatoes, peeled and cut into large chunks
1 medium red bell pepper, seeded and chopped
1 clove garlic, sliced
½ cup dry bread crumbs
¼ cup olive oil
paprika to taste
salt to taste
ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
  • Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

A super easy, single pan, all-in-one dinner. The potatoes go in the oven first, while you mix and season the chicken pieces, zucchini, cherry tomatoes and onions. Then add them to the pan, and continue cooking until the chicken is done and the potatoes are crisp on top and golden.

454 g (about 8) sliced Baby potato
2 tablespoons (about 30 ml) Olive oil
? teaspoon Sea salt
681 g (about 8 ½) Chicken pieces
340 g (about 1 ¾) sliced Zucchini
284 g (about 2) sliced Onion
340 g (about 22 ?) Cherry tomatoes
1 tablespoon (about 2 g) Fresh thyme
1 teaspoon (about 4 g) Lemon zest

Steps:

  • Pre-heat oven - 230°C
  • Add baby potato, olive oil and sea salt to a clean large mixing bowl and mix
  • Transfer vegetables to baking sheet
  • Roast until softened - 15 min, 230°C
  • Add chicken pieces, zucchini, onion, cherry tomatoes, olive oil, fresh thyme, lemon zest and sea salt to a clean large mixing bowl and mix
  • Transfer chicken to baking sheet
  • Roast until golden brown - 20 min, 230°C
  • Serve
